Have you noticed? Have you noticed that I’m currently obsessed with guacamole and pico de gallo. I’m piling it on alllll the things I can think of. Well, other than my handy chips. I always make sure to make extra so I can enjoy it with my chips too! That’s why these delicious Mexican Fish Stick Tacos were born!
These fish stick tacos are so easy for a last minute dinner recipe but they have a ton of flavor. Crisp corn tortillas are piled high with Gorton’s Haddock Fish Sticks, guacamole, pico de gallo and topped with a lime sour cream dressing.
Those Gorton’s Haddock Fish Sticks are cut from whole fillets and extra large so you know you are still feeding your family the good stuff!
I bit into one of these fish tacos and the flavor literally exploded in my mouth and I couldn’t stop eating.
Easy dinners does not mean they have to lack flavor. These Mexican fish tacos are proof of that!
Mexican Fish Stick Tacos
Have I told you before that fish sticks bring me back to my childhood? My Mom always had a box of Gorton’s fish sticks in the freezer for a quick meal when she was out of energy and needed something quick. She always made au gratin potatoes (out of the box which we loved!) with fish sticks. Typically she would pull a batch of frozen corn on the cob out that she had froze in the summer to serve with our fish sticks and potatoes.
How can meals like that bring back memories and make them feel like it was just yesterday?
Now, I’m the one pulling my lifesaving fish sticks out of the freezer for days I just want to hit the easy button! There’s always a box of Gorton’s fish sticks in the freezer for those days, which often times feel like they come way to frequently!
I love that you can take those fish sticks and with just a few additional ingredients make them into something special like Mexican Fish Stick Tacos.
You guys, totally go buy the guacamole and pico de gallo if you want. No judgement here.
Some days you just don’t want to be slaving over dinner so make it as easy as possible!
Ingredients Needed for Mexican Fish Tacos
- Gorton’s Haddock Fish Sticks
- Corn tortillas
- Guacamole
- Pico de gallo
- Sour Cream
- Lime juice
- Cumin
How to Make Fish Stick Tacos
First thing you will need to do is prepare your Gorton’s Haddock Fish Sticks according to package directions.
While those are baking you will need to make your guacamole and pico de gallo if you choose to make homemade version, otherwise you can grab it from the store!
Grab a small mixing bowl and combine the lime dressing ingredients; sour cream, lime juice and cumin.
When the fish sticks are almost done baking prepare corn tortillas according to package directions then layer with fish sticks, guacamole, pico de gallo and lime dressing!

Mexican Fish Stick Tacos
Ingredients
- 16 pieces Gorton's Haddock Fish Sticks
- 8 corn tortillas
- 1 c. guacamole
- 1 c. pico de gallo
Lime Dressing
- 1/3 c. sour cream
- 1 Tbsp lime juice freshly squeezed
- 1/4 tsp cumin
Instructions
- Prepare Gorton's Haddock Fish Stick according to package directions.
- Meanwhile prepare guacamole and pico de gallo if you have not done this.
- In a small mixing bowl combine Lime Dressing ingredients and whisk until combined. Store in refrigerator until ready to assemble tacos.
- When the fish sticks are almost done prepare corn tortillas according to directions.
- To assemble tacos place two fish sticks in a tortilla. Top with guacamole, pico de gallo and lime dressing. Serve immediately.
Fish sticks are the only way my kids will eat fish! They are delicious! What a great idea to use them in tacos!
