Lettuce Frito Salad ~ Delicious Corn Chip Salad Layered with Corn Chips, Bacon, Cranberries and Topped with a Delicious Homemade Tangy Poppy Seed Dressing!
Can you believe it’s almost spring? As I look out the window at the snow it’s hard to believe but it is. That means Easter is going to sneak up on me before I know it. This Lettuce Frito Salad is what I’m bringing to Easter if I’m in charge of a salad! I love the tangy poppy seed dressing, fresh, crisp lettuce, bacon bits, tart cranberries, cheese and of course those crisp Frito chips! I’m all about a little crunch and they are the perfect ending touch on this Corn Chip Salad!
Ingredients Needed for Lettuce Frito Salad!
- Canola oil
- Cider vinegar
- Prepared yellow mustard
- Poppy seeds
- Corn chips
- Bacon bits
- Mozzarella cheese
- Dried cranberries

The one I always look forward to is dying Easter Eggs at my Aunt’s house with all my cousins and their kids. We always do it on Good Friday and it’s became quite the event! Let’s just say we keep multiplying!
My Dad has six siblings and they all live here except one, who is only three hours away. A lot of his siblings had 3+ kids and most of the next generation are married with kids of our own now. Let’s just say we need BIG houses to have family gatherings in! In fact my Mom just told my Dad he had to add on a new garage so she could host his family for Christmas. You know what is even crazier? He might actually go through with it after talking about it for 20+ years!
I won’t believe it until I see it!
Back to Easter. Good Friday we all get together and dye Easter eggs, we order pizza and we have a big Easter egg hunt. It’s a blast. It’s nice to see everyone because we only get together a few times of year even though we are almost all in this area.
On Easter Sunday we are going to go to church, of course, and then head out to my Mom’s house where I’m hoping to see both of my brothers and their families! If it’s nice out I’m sure we will have a little Easter Egg hunt for my kiddos. My older brother’s kids are a little bit old for that so I’ll bribe them into helping!
I’m pretty sure I’m going to inform my Mom that I’m bringing the salad because I’ve dying to have this again! I love the tangy poppy seed dressing, layers of lettuce, mozzarella, bacon, and Fritos! When I made this to test I “gifted” the leftovers to the ladies I used to work with. They were over the moon that they had lunch for a few days on me. I got rave reviews so I know you are going to love it too!
Tools Helpful for Making Lettuce Frito Salad!
You can make this Corn Chip Salad the night before. Just chop the lettuce and assemble. Make sure to leave the dressing and chips off until right before you serve it. If you are only going to eat a small portion of it just take out the amount you want and toss it with a little dressing. Cover the rest of the salad in an airtight container and pop into the fridge for later!Print

Lettuce Frito Salad ~ Delicious Lettuce Salad Layered with Corn Chips, Bacon, Cranberries and Topped with a Delicious Homemade Tangy Poppy Seed Dressing!

- Total Time: 20 minutes

- 3/4 c. canola oil
- 1/4 c. cider vinegar
- 1/4 c. mayonnaise
- 2 Tbsp prepared yellow mustard
- 1/2 tsp salt
- 3/4 c. sugar
- 2 Tbsp chopped onion
- 3/4 tsp poppy seeds
- 12 c. chopped lettuce
- 1 9.25 oz package corn chips
- 1 c. bacon bits
- 1 c. shredded mozzarella cheese
- 1 8 oz package dried cranberries
- Make dressing by combining oil, vinegar, mayonnaise, mustard, salt, sugar and onion in blender. Cover; process until smooth in blender. Stir in poppy seeds.
- Place salad ingredients in large bowl; toss with dressings. Serve immediately.
If not serving immediately store in fridge in airtight container. Add dressing and toss before servings.
If not serving all at once just take the amount you would like to eat out and top that with dressing. Store the rest of the salad and dressing in fridge.
