I love a warmed baked good as much as the next person, but sometimes it’s relieving to make a recipe that doesn’t require baking. I don’t have to keep an eye on the oven and there’s no risk of burning something I worked hard to make! Haystack cookies are another favorite no bake cookie recipe of mine.

Ingredients for this No Bake Cookie Recipe
- Quick oats – Yes, you can use quick oats in these cookies! It actually makes them so much easier.
- Cocoa powder – Unsweetened cocoa powder is all you need to make these cookies extra chocolatey and delicious.
- Peanut butter – Use a creamy and sweet peanut butter in this no bake cookie recipe. If you’re using a natural peanut butter, make sure you mix the oil into the peanut butter really well before using it.
- Sugar – Regular granulated sugar will sweeten peanut butter chocolate no-bake cookies.
- Salted butter – If you don’t have salted butter, I recommend adding a pinch of salt to the cookie batter. A touch of salt brings out the flavor of chocolate.
- Milk – Use whole milk for best results. 2% milk and 1% milk will work as well!
- Vanilla extract – A little splash of vanilla extract adds a wonderful well rounded flavor.
How to Make No Bake Cookies
- Line two baking sheets with parchment paper and set them aside.
- Then, combine salted butter, granulated sugar, cocoa powder, and milk in a medium saucepan.
- Place the saucepan over medium heat and cook the mixture, stirring frequently, until it reaches a full boil. Let the mixture boil for about 60 seconds without stirring.
- Then, remove from heat and stir in vanilla extract, smooth peanut butter and quick oats.
- Stir mixture until it is thoroughly combined, then use a cookie scoop or ice cream scoop to scoop the cookies. Place cookies onto lined baking sheets.
- Allow the drop cookies to rest at room temperature for 20-30 minutes until set.
- Serve when ready!
How to Store No Bake Cookies
These cookies do best when stored in a cool area. You can store them at room temperature, but if you know you kitchen tends to be warm then you’ll be better off keeping the cookies in the fridge.
If you store the cookies in the fridge or freezer, place parchment paper in between layers and store in an airtight container. They’ll last for two weeks in the fridge, 3 months in the freezer, and one week at room temperature! Choose whichever storage option is best for you and how quickly you plan to eat these yummy no bake cookies.
What makes no bake cookies dry?
If your cookies turn out crumbly and dry, you likely boiled the mixture for too long. Once a full boil starts, set a timer for 60 seconds exactly. Don’t go past 90 seconds at maximum and pull it off the heat once the time is up.
Why are my no bake cookies too sticky?
Opposite of boiling the cookies too long, if the cookies are too sticky they likely weren’t boiled long enough. Try again and be sure you are timing how long you are boiling the mixture!

Ingredients
- ½ cup salted butter
- 1 ¾ cups granulated sugar
- ¼ cup unsweetened cocoa powder
- ½ cup milk
- 1 teaspoon vanilla extract
- ⅔ cup creamy peanut butter
- 3 cups quick oats don’t use old fashioned oats
Instructions
- Line two baking sheets with parchment paper. Set aside.
- In a 2.5 to 3 quart medium saucepan combine butter, sugar, cocoa, and milk.
- Set over medium heat, and cook stirring frequently until it reaches a full boil.
- Allow the mixture to boil for 60 seconds without stirring.
- Remove from heat, immediately add in vanilla, peanut butter and quick oats.
- Stir mixture until well combined then, using a medium cookie scoop drop mixture onto lined baking sheets.
- Allow to rest at room temperature until set, about 20 – 30 minutes (to speed up setting refrigerate the cookies).
- Store cookies in an airtight container at room temperature or in the fridge.
