The crunchy cornflake cereal keeps it’s crispy texture, while the corn syrup and peanut butter mixture makes a chewy candy like coating that forms a lovely little cookie.

- Peanut butter – Use your favorite rich and cream smooth peanut butter to make these no bake peanut butter cornflake cookies!
- Light corn syrup – Light corn syrup helps the cookie ingredients stick together, but it also keeps these cookies from becoming too hard.
- Vanilla extract – A little vanilla adds depth of flavor to the cornflake cookies. Cookies without vanilla extract just don’t make sense!
- Maple syrup – Some more sticky sweet goodness to help hold the cereal mixture together.
- Cornflake cereal – You can’t have a peanut butter cornflake cookies recipe without cornflakes, right?
- Granulated white sugar – Sweeten these to perfection with some granulated white sugar.

How to Make Peanut Butter Cornflake Cookies
- Line a large baking sheet with parchment paper and then set it to the side to be used later.
- Then pour the cornflakes into a large bowl and set them aside as well.
- Add corn strup and maple syrup to a medium saucepan and warm on medium low heat for about 3-4 minutes, stirring occasionally, until slightly bubbly.
- Turn the heat off and then mix in the sugar and vanilla extract. Then mix in the peanut butter with a rubber spatula. The mixture will be really sticky.
- Pour the peanut butter mixture over the corn flakes and mix slowly and carefully with a spatula.
- Working really quickly, drop 1 ½ tablespoon cookie mounds onto the prepared baking sheet using a spoon or cookie scoop.
- Allow the cookies to set for 10-15 minutes, then serve or store!
How to Store Peanut Butter Cornflake Cookies
Place cookies into an airtight storage container in a single layer. Store at room temperature for 2-3 days. If you have to stack the cookies, place a sheet of wax paper in between the layers.
FRIDGE: To extend the life of the cookies, place them into an airtight container and store in the fridge for up to a week. You may need to let each cookie sit out for a few minutes before eating if they get really cold. Otherwise, the texture could be tough.

Yes, you can freeze these cookies! I recommend freezing them in a single layer simply because they could stick together as they thaw. Freeze for up to 2-3 months. Allow to thaw before consuming.
Keep in mind that the texture of the cookie may change after being frozen and thawed.

Ingredients
- 5 cups cornflake cereal
- ⅔ cup light corn syrup
- ¼ cup maple syrup
- ¾ cup white granulated sugar
- 1 teaspoon vanilla extract
- 1 cup creamy peanut butter
Instructions
- Line a large baking sheet with parchment paper and set off to the side.
- Pour the cornflake cereal in a large bowl and set off to the side.
- In a medium saucepan pour in the corn syrup and the maple syrup. Warm on medium low heat, stirring occasionally until slightly bubbly, about 3-4 minutes.
- Turn off the heat and mix in the sugar and vanilla extract and stir well.
- Using a rubber spatula, mix in the peanut butter. The mixture will be very sticky.
- Pour the mixture over the reserved cornflakes and mix well.
- Working quickly, using a 1 ½ Tablespoon cookie scoop or a Tablespoon, drop cookies onto your prepared baking sheet.
- Let cookies set for 10-15 minutes and serve.
