Ingredients For Sour Cream Raisin Bars
Bars
- Quick oats – These offer a great flavor and texture to base and topping of these bars.
- All-purpose flour – Use your basic AP flour for best results.
- Butter – Allow the butter to soften at room temperature for easy mixing. Use salted or unsalted, but if you use salted, decrease the amount of salt you add.
- Brown sugar – Brown sugar is great because it gives more of a caramel flavor to the crust.
- Baking soda – This is the leavening agent used in these bars.
- Salt – Balances the sweetness of the sour cream raisin bars.
Filling
- Egg yolks – Beaten yolks give the filling a rich flavor.
- Sour cream – Use full fat for a nice creamy filling with a bit of a tang
- Raisins – You can’t have raisin bars without raisins! Other dried fruits like cranberries will be good too if you ever want to switch it up.
- Cornstarch – Thickens the filling.
- White sugar – White sugar dissolves well in the filling and offers the perfect amount of sweetness.
- Cinnamon – Offers great flavor and balances the sweetness of the filling.
How To Make Sour Cream Raisin Bars
In a large bowl, cream the butter and brown sugar until light and fluffy.
In separate bowl combine the all-purpose flour, quick oats, baking soda and salt. Gradually add to the creamed mixture (mixture will be crumbly).
Set aside 2 cups of the oat mixture. Add the remaining mixture into the prepared 13-in. x 9-in pan and press it to the edges of the baking pan.
Place in preheated for 15 minutes (leave oven on). Cool the crust.
In a small saucepan, combine filling ingredients. Bring to a boil over medium high heat, reduce heat and simmer and stir for 5-8 minutes.
Pour over the crust; sprinkle with reserved oatmeal mixture. Place back in the preheated oven and bake another 15 minutes or until the top is golden brown.
Remove from oven and let cool before cutting.
Pro Tips
- Line your baking dish with parchment paper, allowing it to hang over the edges, so you can easily lift out the dessert and cut it into bars.
