Antipasto salad is a quick and easy salad recipe that’s perfect for a light and low-carb dinner or as a dish for potlucks, picnics or BBQs. It’s filling and full of flavor!
I love a good summer salad and this is antipasto salad is one even Jason loves! It’s loaded with Italian meats, cheese, and other delicious ingredients for a tangy, flavorful Italian salad. I can eat it for dinner any night of the week! Sometimes I add some homemade breadsticks when I need a few more carbs, ha!
There’s no cooking involved – it’s really a just toss and serve salad that you can easily adjust to your tastes. Just don’t skip the homemade dressing – it’s tangy and pulls the whole salad together. Plus, it’s super easy to make.
What Does Antipasto Mean?
In Italy, the first course of a meal is usually the antipasto course which is what it sounds like – no pasta! It can be many things like cured meats, cheese, roasted or marinated vegetables or a combination of any of these.
This antipasto salad is inspired by that idea, but it’s filling enough to be the entire meal!
Ingredients
The ingredient list looks long, but half of it is for the dressing and I bet you already have most of those ingredients on hand. So let’s talk about the dressing first!
Salad Dressing
- Extra-virgin olive oil
- Red wine vinegar
- Dijon mustard
- Lemon juice
- Onion and garlic powder
- Dried oregano
- Ground black pepper
Just whisk all of the ingredients in a bowl until it emulsifies and thickens up. You can easily make the dressing ahead – it will keep in the refrigerator for up to two weeks!
How to Make the Salad
There is a lot going on in this salad and all of the flavors and textures work perfectly together! The nice thing is you can adjust the amounts if you want – like add more or less meat, cheese or other ingredients so it’s just right for you.
You will need a big bowl to make it – just layer all of the ingredients on top of the lettuce. So easy!
- Chopped romaine lettuce
- Chopped prosciutto
- Chopped salami
- Cubed mozzarella cheese
- Halved grape tomatoes
- Chopped jarred artichoke hearts
- Chopped pepperoncini
- Sliced jarred roasted red peppers
- Pitted and chopped kalamata olives
Layer everything in the bowl, pour the dressing over the top, give it a toss and that’s it! So easy.
Recipe Variations
You can switch things out for variety – here are some other ways I’ve made this antipasto salad:
- Switch the cheese! You can swap low-moisture mozzarella for fresh mozzarella or try cubed provolone cheese. Sometimes I sprinkle some grated Parmesan cheese over the top of the salad, too!
- For the meat, there are lots of different kinds of Italian hard salami to choose from – if you look near the specialty cheese at the store there’s usually a lot of options. Pepperoni is also great in this salad!
- You could also add sun-dried tomatoes instead of roasted red peppers, or add both!
It’s also really easy to double or triple the recipe and serve it as a side dish at potlucks, BBQs or parties. It’s always a hit when I make it!

Salad
- 6 c. chopped romaine
- ½ c. chopped prosciutto
- ½ c. chopped salami
- 8 oz Mozzarella cheese cut into bite-size pieces
- 1 c. grape tomatoes halved
- 14 oz can artichokes drained and cut into bite size pieces
- 4-6 small pepperoncinis chopped
- ½ c. roasted red peppers drained and sliced
- ½ c. pitted and chopped Kalamata olives
Dressing
- ¼ c. extra virgin olive oil
- 3 Tbsp red wine vinegar
- 1 tsp dijon mustard
- 1 Tbsp lemon juice
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp dried oregano
- Freshly ground black pepper to taste
Instructions
- In a large bowl layer romaine on the bottom. Arrange the salad ingredients on top of the lettuce.
- In a small bowl whisk together the dressing ingredients. Pour over the top of the salad and toss all ingredients to combine.
Tips
