Looking for a new, healthy summer salad? This Watermelon Salad is unique, easy and healthy! Bursting with flavor from a mixture of cucumbers, red onion, mint and watermelon then tossed in a lime dressing and topped with feta cheese.

Make way for all the summer salads! I love this time of year for about a thousand reasons but near the top of the list are all of the colorful salads like this watermelon salad I’m sharing today. Like my broccoli salad and Greek salad it’s a fresh and easy side dish that’s perfect warm weather!
Nothing makes me happier than a pretty salad on the dinner table and this watermelon salad is one of the prettiest! It’s so refreshing and loaded with tons of flavor – it’s basically summertime in a bowl.
What’s in Watermelon Salad?
This easy side dish has all kinds of good-for-you healthy ingredients:
- Watermelon
- English cucumber – This type of cucumber doesn’t have seeds and is sweeter, if you grab a regular cucumber you’ll need to peel it and take the seeds out.
- Red onion – Did you know if you run the red onion under warm water it will take the bite out? Perfect for when you are using it in salads like this!
- Fresh mint – If you prep this ahead of time, make sure to add this right before serving so it doesn’t turn brown.
- A super simple dressing made with lime juice, olive oil and salt and pepper
- Crumbled feta cheese – We recommend grabbing a block and crumbling it yourself as the pre crumbled package tends to dry out quicker.
The flavors are amazing and it’s so refreshing and delicious! It’s the perfect side dish for so many main dishes. We love it with BBQ chicken, pulled pork sandwiches and beef kabobs.
This healthy salad is perfect for weeknight dinners and a great side dish for potlucks, BBQs and picnics. We all need a unique go-to salad and this one is a great choice – it’s always a hit when I make it!
How to Prepare It
Once you know how to make watermelon cucumber salad I think you’ll want to make it all summer long!
- For the watermelon, I like to cut it into bite-sized cubes.
- English cucumbers are sweeter than regular ones and have very few seeds. Plus, you don’t need to peel them! You can use a regular one, but it will be a little more bitter and you will need to peel it and remove the seeds. Cut the cucumber into bite-sized pieces.
- Thinly slice the onion and then toss it with the watermelon, cucumber, and mint.
Time for the Dressing!
The dressing really pulls the whole thing together – I don’t recommend skipping it!
Just whisk olive oil with fresh lime juice, salt and pepper and pour it over the other ingredients. Sprinkle the crumbled feta over the top and that’s it!
Make it Ahead and Storage Tips
- You can easily toss this salad together and serve it right away, but sometimes I make it an hour or two in advance so the flavors have time to fully develop and marry together.
- If you do make it ahead, wait to add the mint. It has a tendency to brown so add it just before you serve it.
- If you have leftovers, they will keep in the refrigerator for up to a day. The watermelon and cucumber will release juices as they sit so it may be a little juicier than when you first made it, but it still tastes amazing! Just make sure to serve it with a slotted spoon.
- This is such a great way to use watermelon during the summer – the combination of flavors is unique and work perfectly together. Whenever I make it it’s the first side dish to disappear. I hope you love it, too!

Watermelon Salad
Ingredients
- 3 cups watermelon cubed
- 1 English Cucumber diced (1 ½ cups)
- ½ cup red onion thinly sliced
- 2 Tablespoons fresh mint thinly sliced
- ¼ cup olive oil
- 2 Tablespoons fresh lime juice
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground pepper
- ½ cup Feta cheese crumbled
Instructions
- In a large bowl, combine watermelon, cucumbers, onions, and mint.
- In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
- Drizzle dressing over the watermelon mixture and toss to coat.
- Sprinkle with feta cheese and serve immediately.
- Cover and store leftovers in refrigerator up to 1 day.
