Why You’ll Love this Watermelon Feta Salad
- This is such a great way to use watermelon during the summer. The combination of flavors is unique and work perfectly together.
- Watermelon feta salad is an easy side dish has all kinds of good-for-you, healthy ingredients.
- It only takes 15 minutes to throw this salad together.
Ingredients for Watermelon Feta Salad
This easy side dish has all kinds of good-for-you healthy ingredients:
- Watermelon – Grab the most fresh and ripe watermelon that you can find.
- English cucumber – This type of cucumber doesn’t have seeds and is sweeter, so I like to use it in this recipe. If you grab a regular cucumber you’ll need to peel it and take the seeds out.
- Red onion – Did you know if you run the red onion under warm water it will take the bite out? It’s the perfect method for when you are using it in salads like this!
- Fresh mint – If you prep this ahead of time, make sure to add it right before serving so it doesn’t turn brown.
- Lime juice – Fresh lime juice is the great way to add a little bit of tart flavor to this watermelon feta mint salad.
- Olive oil – While I prefer the flavor of olive oil in the homemade dressing, you can use avocado oil as a substitute.
- Salt and black pepper – Bring out all of the flavors in watermelon feta salad with a little bit of salt and black pepper.
- Crumbled feta cheese – We recommend grabbing a block and crumbling it yourself as the pre crumbled package tends to dry out quicker.
How to Make Watermelon Feta Salad
Once you know how to make watermelon cucumber salad I think you’ll want to make it all summer long!
For the watermelon, I like to cut it into bite-sized cubes. Just grab a sharp knife and carve the watermelon, then slice up the fruit into little cubes.
Then cut the cucumber into bite-sized pieces. Thinly slice the onion and then toss it with the watermelon, cucumber, and fresh mint leaves in a large bowl.
Next, whisk together the olive oil with fresh lime juice, salt and pepper and pour it over the other ingredients. Sprinkle the crumbled feta over the top and that’s it!
Pro Tips for Watermelon Feta Salad
- You can easily toss this salad together and serve it right away, but sometimes I make it an hour or two in advance so the flavors have time to fully develop and marry together.
- If you do make it ahead, wait to add the mint. It has a tendency to brown so add it just before you serve it.
- Dice everything into small pieces so that every single bite has a little bit of everything.
Storage
If you have leftovers, they will keep in the refrigerator for up to a day. The watermelon and cucumber will release juices as they sit so it may be a little juicier than when you first made it, but it still tastes amazing! Just make sure to serve it with a slotted spoon so that each serving of this watermelon salad recipe isn’t swimming in all the juices.
