- Stir in diced carrots, celery and mushrooms then season with bouillon, parsley, and pepper.
- Add beef broth, garlic, tomato paste, egg noodles and bay leaves.
- Bring to a boil, reduce heat to medium-low and simmer for 30 minutes or until vegetables and noodles are cooked through.
- Remove bay leaves and serve.

- You may want to cook noodles separately if you plan to freeze this soup or use it for meals throughout the week so they don’t absorb a ton of extra liquid.
Storage And Reheating
Fridge: Store leftovers in an airtight container for up to 4 days.
Freezer: Store leftover beef and noodle soup in the freezer once cooled completely. Freeze in individual portions for easy lunches. Thaw overnight in the fridge before reheating.
Reheat soup on the stovetop until heated through if heating more than one portion. If you are just heating up one bowl, use the microwave for convenience and easier clean up.

- 3 large carrots peeled and chopped
- 12 ounces mushrooms sliced/rinsed/dried
- 8 cups beef broth
- ¼ teaspoon dried parsley
- ½ teaspoon ground black pepper
- 4-6 cloves garlic minced
- 2 Tablespoons tomato paste
- 2 cups wide egg noodles
- 2 dried bay Leaves
Instructions
- Add oil to a large pot or dutch oven over high heat. Add beef and onions to the heated pot and sear beef on all sides.
- Stir in carrots, celery and mushrooms. Season with bouillon, parsley, and pepper.
- Add beef broth, garlic, tomato paste, egg noodles and bay leaves.
- Bring to a boil, reduce heat to medium-low and simmer for 30 minutes or until vegetables and noodles are cooked through.
