I adore a delicious Crock Pot recipe especially when it’s this amazing Balsamic Crock Pot Roast Beef with potatoes and carrots. You put the beef roast in the slow cooker in the morning along with your vegetables. Then you top it with a mouthwatering Balsamic mixture and let it cook all day. The result is a melt in your mouth roast that is tender and falls apart, plus carrots and potatoes. It’s an entire meal in your Crock Pot. Slow Cooker Pot Roast is perfect for busy weeknight dinners!
Crock Pot Roast
Crock Pot? In the summer? I bet you think I’m nuts.
A lot of people associate the beloved crock pot with the winter months, but I’m here, jumping and screaming from the rooftops, to tell you not to put that baby away.
If you already did, dust it off and give it a hug!
The crock pot is perfect for hot summer days when you don’t want to heat up your entire house and you still want a fabulous home-cooked meal. Plus, summers are crazy busy. Like super crazy.
So, who doesn’t like a quick meal you can throw in the crock pot and forget about then come home too? {Picture me jumping up and down right now waiving my hand} ?
I think I could drink it with a straw.
Now if you aren’t such a fan of balsamic no worries. Neither is the hubs and he loved this roast. It’s juicy, tender and has a hint of balsamic. If you’re more of a fan of prime rib roast click this link for another great recipe!
Beef… it’s what’s for dinner ya know!!!
Crock Pot Roast Beef
Growing up in the Midwest on a family farm means that we often had meals full of meat and potatoes.
My husband also grew up this way but I love that I can serve that to my family and still mix it up a little with that balsamic.

You can brown your roast before putting it in the crockpot, it will add another layer of flavor. Best thing with THIS recipe is that bit of balsamic vinegar adds a subtle flavor that is quite fabulous without the extra work!
What cut of beef is best for slow cooking?
- Beef Chuck
- Rump Roast
- Brisket
Tough cuts of meat will become fork tender and delicious with this easy recipe!
Do you put water in a crock pot to cook a roast?
The slow cooker is made for trapping the steam which tenderizes your meal. This recipe uses both beef broth and balsamic vinegar to tenderize the meat and this also keeps it moist.
Why is my pot roast tough?
Usually, because it’s not been cooked long enough OR has been cooked too long in the slow cooker without enough moisture resulting in a dry roast.

Glad you enjoyed it Nickole! Thanks for letting me know!

Wow, this looks delish. We’re always looking for new crockpot recipes (who isn’t during this season, right?) And this looks like a whole family win! Minus the carrots, toddlers think they’re poisonous. Thanks for sharing your recipe!
Julie Evink says
Thanks Chelsea! I know I’m always on the look out for new slow cooker recipes too!
Laura McCoy says
Do you think I could use a cranberry walnut balsamic? I bought it at a olive oil store and have no idea what to make with it… (new to the whole cooking thing.. lol)
Julie Evink says
Yes I think you could! That would be fabulous with a pork loin too. Just make the pork loin then reduce the balsamic over medium heat for 5-10 minutes till it gets nice and thick then drizzle it over the pork loin! Delicious!
Colleen Bruns says
I was wondering if you put those baby potatoes in the entire time and how did they turn out? We’re they mushy at all? Thanks so much, I wanted to make this tomorrow.
Colleen
Julie Evink says
Yes I do! And no they aren’t mushy for me at all.
Deadra says
Well I clicked on the link from Pinterest & I see no recipe for this at all …

Did you see the “Click her for Recipe” Button?

Hi Julie – this recipe is to die for. I made it for a second time today and wow! I braise the meat before placing it in the crock-pot to lock-in the flavor. I add mushrooms and 1/2 a sweet onion chopped as well. YUM!
Julie Evink says
Great additions! I’m glad you enjoyed it!
Karen Goodman says
I was thrilled to find a complete meal in a single crockpot since I’m in the middle of a kitchen remodel. It was actually the first of the recipes I tried that I included on my blog post with 15 crockpot recipes for a kitchen remodel (http://futureexpat.com/2014/12/crockpot-recipes-kitchen-remodel/).
The recipe worked great, though I think I would have liked a cut of beef that shredded more (I ended up with slices). And a little more balsamic flavor. I love how easy it was too!
Julie Evink says
Thanks Karen!
Stephanie says
I’m making this right now! The only thing is as it has cooked there seems to be more and more liquid in the pot. It’s not really looking at all “charred” like your picture. Should I drain some of the liquid or just let it keep cooking? (about 6 and a half hours in)
Julie Evink says
I’m sorry Steph that I didn’t see this earlier. I would have just kept cooking it!
Julie Evink says
Glad you enjoyed it Nancy!
Jess says
I made this this week and it was awesome! My husband is kind of picky and he asked what I did differently because it tasted so good. It got a little sweet so next time I think I’ll halve to brown sugar. Definitely will make again!
Julie Evink says
So glad you enjoyed it Jess!

Love this recipie, it’s in my slow cooker now AGAIN ! ready for tea tonight 🙂
Jeanne says
First of all, let me state that I am not a pot roast type of person. But the flavor on this was so amazing, and I will definitely make it again.
Julie Evink says
Love hearing this!! Enjoy!
Rachel says
I’ve been excited to try this for a while now and I think today is the day! This may be a super silly question but I only have a 2.6lb roast, should I half the time and the measurements of everything else?
Julie Evink says
I think it’s fine with the normal ingredients just watch the cooking time. It might not take quite as long to cook through!
Val says
Made this tonight. I followed the directions almost exactly, the only difference was I added sliced onion. The meat was tender, the potatoes and carrots were cooked perfectly. My husband LOVED it but personally I found it a little sweet for my taste. Still a very tasty and easy recipe.
Linda says
Though the meat & veggies are very very tasty, I found the sauce to be way too sweet. If I make it again, I will add much less brown sugar.
