Why you’ll love this recipe for Hamburger Stroganoff
- Ready in 30 minutes. Just did a little dance over that one, right?
- Budget friendly, but delicious so the whole family will enjoy it and you won’t need to be a short order cook.
- Filling, delicious and easy to make with pantry staples. That recipe you can always fall back on in a pinch.

Hamburger Stroganoff Recipe Ingredients
- Onion – Dice fresh yellow onion or take the shortcut and grab frozen diced onion at the grocery store.
- Garlic – Fresh is best, but in a pinch we used minced from the refrigerator which is not as flavorful so we add a bit extra.
- Butter – We use salted butter, either will work.
- Ground Beef – You could also substitute ground turkey or chicken, but I find beef gives it best taste.
- All-purpose flour – Cornstarch would also work to thicken it.
- Salt & Pepper – Adjust to your preferences.
- Sliced mushrooms – I use canned mushrooms because I can keep them in my pantry, but you can also slice up fresh mushrooms. We recommend a white mushroom but you can use cremini or portobello also.
- Cream of Chicken Soup – Seems a little odd, but this is what Mom always used. You can substitute cream of mushroom if you’d like.
- Sour Cream – Another option to lighten it up is use Greek yogurt instead of sour cream or do a half and half mixture.
- Egg Noodles, mashed potatoes or rice – Whatever you prefer to serve your beef stroganoff over.

Flavor Enhancers for Beef Stroganoff with Hamburger
Here’s some ideas on adding a new flavor to your dish!
- A teaspoon of dijon mustard
- Worcestershire sauce
- Dash of smoked paprika
- Splash of hot sauce
- Chop up raw bacon and add it in with the ground beef
- Sprig or two of fresh thyme or 1/4 tsp dried thyme
Expert Tips for Easy Hamburger Stroganoff
- Make sure to remove the skillet from the heat before stirring in sour cream because if it gets to hot it will curdle.
- If your sauce is to thick stir in a little beef broth to thin it out.
- If you have leftovers refrigerate them in an airtight container for 3-4 days. You can also freeze the stroganoff (not the noodles). Defrost in the refrigerator overnight and warm in microwave or on stovetop in saucepan to reheat.

Since I’m vegan, I actually passed this to my best friend and she substituted the sour cream for yogurt and they LOVED it!!
Instead of sour cream in an onion dip she uses yogurt, so naturally she did it with this too!
She said TGANK YOY and she will definitely look for more recipes from you.
From the both of us, KEEP COOKING!! We love you!
Huge fans,

I cook the ground beef with chopped onion, drain it and set it aside. Then I cook the chopped bacon til soft/crispy. Drain the bacon and add it to the ground beef. Stir in the cream of mushroom soup and let that all simmer together to combine the flavors. Right before serving I stir in the sour cream. Then serve it on wide egg noodles. Adding mushrooms canned or fresh and garlic is a matter of taste.

Sounds delicious! Thanks!
Dianna says
Too much sour cream. It overpowers teverything. Also should hav been cream of mushroom soup. I had to doctor this up like crazy. Added lots of beef stock. Unfortunately i wont make this again.
Michelle Sperr says
Sorry this recipe didn’t work for you Dianna!

This recipe is called “Skid Road Stroganoff” and it’s out of the “I Hate to Cook” cookbook. Perhaps some credit should have been given there. It is an excellent recipe though. I’ve been making it for many years.
Julie says
Interesting! This is how I’ve always made this recipe, I’m glad you enjoyed it!
Carol says
Looks oh so good!!!!
Julie says
You’ll love it!
murray says
Came out way too thick!! Needs water with the soup or something…tastes good but
consistency of glop!
Julie says
I’m sorry! You could add some milk to thin it out if that’s your preference!
Brenda Muir says
Omit the flour?
Julie says
That would work as well!
Ann says
Made recipe as written. Made a disgusting gloopy mess. Ended up having to add liquid at the end to make it edible. Way too much sour cream too, 1/2 cup would have been plenty. Why does it need flour, when using condensed soup? Why is there no extra liquid added? That extra thickener was a hot mess.
Julie says
I’m sorry you didn’t enjoy this one, Ann. Maybe you could add some beef broth to it next time to thin it out if that is how you prefer it.
Koni says
Maybe it would have been better If they would have put cream of mushroom soup in the ingredients instead of cream of chicken! That’s what I always use I can’t imagine it with cream of chicken!
Julie says
Cream of mushroom would be a good substitute for this one!
Becky Crider says
Just found your recipe and we’re making it tonight. Just wondering is it really 336 calories per gram?
Julie says
There are 336 calories per serving and 6 servings in the entire dish.
Mike says
Do I drain off the grease before I add the flour and mushrooms etc…reads a little backwards to me.
Julie says
Drain the grease after adding flour, salt, pepper and mushrooms.
Jenn says
This is one of our favs. I double the recipe so we can carry leftovers to work the next day. It’s really good reheated.
I wanted to change it up and try beef stew meat instead of ground beef. Do you have any suggestions?
Julie says
I’m glad it is one of your favorites, Jenn! I think using beef stew meat would work fine, add the stew meat the same time you would add the ground beef and cook to your liking.
Gran says
I do not like sour cream. Do you think adding two kinds of soup would be ok?
Julie says
Two kinds of soup should work, you can also use plain greek yogurt as a replacement for sour cream if you don’t mind the flavor of greek yogurt.
