Why you’ll love this recipe for Hamburger Stroganoff
- Ready in 30 minutes. Just did a little dance over that one, right?
- Budget friendly, but delicious so the whole family will enjoy it and you won’t need to be a short order cook.
- Filling, delicious and easy to make with pantry staples. That recipe you can always fall back on in a pinch.

Hamburger Stroganoff Recipe Ingredients
- Onion – Dice fresh yellow onion or take the shortcut and grab frozen diced onion at the grocery store.
- Garlic – Fresh is best, but in a pinch we used minced from the refrigerator which is not as flavorful so we add a bit extra.
- Butter – We use salted butter, either will work.
- Ground Beef – You could also substitute ground turkey or chicken, but I find beef gives it best taste.
- All-purpose flour – Cornstarch would also work to thicken it.
- Salt & Pepper – Adjust to your preferences.
- Sliced mushrooms – I use canned mushrooms because I can keep them in my pantry, but you can also slice up fresh mushrooms. We recommend a white mushroom but you can use cremini or portobello also.
- Cream of Chicken Soup – Seems a little odd, but this is what Mom always used. You can substitute cream of mushroom if you’d like.
- Sour Cream – Another option to lighten it up is use Greek yogurt instead of sour cream or do a half and half mixture.
- Egg Noodles, mashed potatoes or rice – Whatever you prefer to serve your beef stroganoff over.

Flavor Enhancers for Beef Stroganoff with Hamburger
Here’s some ideas on adding a new flavor to your dish!
- A teaspoon of dijon mustard
- Worcestershire sauce
- Dash of smoked paprika
- Splash of hot sauce
- Chop up raw bacon and add it in with the ground beef
- Sprig or two of fresh thyme or 1/4 tsp dried thyme
Expert Tips for Easy Hamburger Stroganoff
- Make sure to remove the skillet from the heat before stirring in sour cream because if it gets to hot it will curdle.
- If your sauce is to thick stir in a little beef broth to thin it out.
- If you have leftovers refrigerate them in an airtight container for 3-4 days. You can also freeze the stroganoff (not the noodles). Defrost in the refrigerator overnight and warm in microwave or on stovetop in saucepan to reheat.

This is an old recipe minus the flour and use cream of mushroom. We make it all the time with no flour. What is the purpose of the flour?
Leanna says
The recipe says cream of chicken but the video uses cream of mushroom.

This is just like the stroganoff I grew up with only better! I think my mom always made the Hamburger Helper kind, but I prefer to make things from scratch and this was totally delish!

Have you ever used this as a topping for baked potatoes?
Julie Evink says
I haven’t but now I want to! Sounds fabulous!

We usually get our recipe from the 1965 Betty Crocker Dinner for Two cookbook . This is the closest to the original we’ve found. I usually double the flour and the pepper. My mom uses egg noodles , but i prefer to use macaroni. We use fresh garlic and fresh yellow onions. We were panicked because we couldn’t find our recipe to know the measurements .you are a life saver.
Julie Evink says
Oh I’m so glad I could help you out! Great additions to my recipe!!

I use Chinese chow mein noodles instead of egg noodles. Started doing this when my kids were young because they loved the chow mein noodles and I have to admit I like the crunch it adds

I am just visiting your site for the first time, Julie, and had to try this recipe tonight. It is yummy! I prepared mine like a casserole, so my noodles would have the full flavor. Oh yes! I had to experiment just a little because of that, so this is what I ended up doing. I shortened up my cooking time by simply adding garlic powder and minced onion flakes to my meat as it cooked and eliminated the flour and butter. I cooked 2 cups of egg noodles while my meat was browning, added my soup to my meat and immediately stirred in my sour cream. I added my cooked noodles and found it too thick/dry so added about 1/2 cup of milk. After a quick taste I decided to add some Kitchen Bouquet Browning and Seasoning Sauce for some additional flavor (maybe 2 teaspoons, tho I did not measure). I SO love this dish! Thank you for sharing it.
