This easy Butterscotch Popcorn is a no-bake treat made with just a few ingredients, perfect for satisfying snack cravings or enjoying during movie night at home.
Some popcorn treats require you to bake them in the oven and stir them every ten minutes or so. Or you have to mix up a sugar syrup on the stove and pour it all over the popcorn. You don’t have any of those extra steps with this butterscotch popcorn recipe.
It is about the easiest treat you could make. The whole family will be thrilled when they come through the door and they smell popcorn wafting through the air and you’ll be happy you haven’t spent an hour stirring popcorn in the oven!

Ingredients for Butterscotch Popcorn
- Popcorn – No matter how you pop it, you will need popped popcorn to make this great treat. I typically use an air popper at home with Orville Redenbacher popping corn. You can salt it if you want, in our house we always do to get the perfect salty yet sweet combination.
- Baking chips – To get the yummiest flavor, use butterscotch and white chocolate chips for this treat.
- Salted mixed nuts – These add flavor and texture to the butterscotch popcorn.
- Coconut oil – Adding coconut oil to the melted baking chips will help the drizzle harden and stay hard at room temperature.
How To Make Butterscotch Popcorn
Add popped popcorn to a large bowl
Melt the cup of butterscotch chips in the microwave in thirty-second increments, stirring after each thirty seconds.
When chips are completely melted, add 1 teaspoon of coconut oil to thin, if desired. Stir until coconut oil is mixed in.
Pour the melted butterscotch chips over the popcorn and stir.
Pour the popcorn out onto a lined cookie sheet. (You can line your cookie sheet with waxed paper, parchment paper, silicone mats, or aluminum foil lightly sprayed with cooking spray).
Drizzle with melted white chocolate chips.
Allow the popcorn to cool completely. To speed cooling, place in the refrigerator if desired.
Before serving, break the popcorn into chunks.
Storage
Store leftover butterscotch popcorn in an airtight container at room temperature up to 3 days.
Freezer: You can freeze butterscotch popcorn to eat another time if you made too much. Store it in an airtight container or freezer bag and allow it to thaw at room temperature when you’re ready to serve.
Pro Tips
- Use a piping bag or cut a corner off a ziptop bag to drizzle the melted white chocolate for precision if you’re trying to make your butterscotch popcorn look super fancy.
