Delicious Caramel Cookie Bars with an amazing layer of gooey caramel stuffed in between the layers with a hint of peanut butter. These cookie bars are EPIC and you’ll never make them another way again!

“I’m going to marry these!”
Truer words have never rang from my lil bro’s mouth.
He might have laughed when he asked the names of these little devils before he took a bit. One bite and he was in love. So in love that he thought he’d marry them.
I love my little brother. He’s the best taste tester ever. Way better than the hubs (sorry love ya hun!). He’s single therefore every time I make something and he gets to taste test he gets super pumped over it. The hubs on the other hand just says one word answers. Nothing like “I’m going to marry these!” Of course I might take offense to that coming from the hubs.
Maybe it’s because my mom trained him so well. Yup going to give mom some credit on this one. Not sure how she trained him to ooo and ahhh over meals and treats, but I’m going to have to pick her brain on this one so I can get the hubs trained.
The hubs…trained. Wow that’s a laugh. Does anyone ever get them trained?

I should also give some credit to the older bro. We were out for Halloween and he had dropped his daughter off to relieve my mom from looking after Miss K. In the midst of the festive bar atmosphere he had to lean over and say, “You have one less bar at home. They were amazing!”
Oh yes that’s right this Momma thought she’d go out for a few adult beverages this past weekend. Yup, that cured me of that for another year. I need sleep.
So if you need someone to propose, love you, oooo and ahh please head to the kitchen with this recipe in hand immediately.
Ingredients Needed
- flour
- baking soda
- salt
- butter
- sugar
- brown sugar
- vanilla extract
- eggs
- semi-sweet chocolate chips
- evaporated milk
- caramels
- peanut butter
Steps to Prepare
- Preheat oven, grease a 9 x 13 in pan.
- Combine the dry ingredients in a small bowl.
- Beat butter, sugar, brown sugar and vanilla in a large mixing bowl until creamy. Add eggs.
- Gradually mix in flour mixture. Stir in the chocolate chips.
- Spread half of the cookie dough into the prepared pan. Bake for 8-10 minutes. Remove from oven.
- While the dough is baking melt caramels and evaporated milk in a double boiler. Add peanut butter after caramels are melted. Melt thoroughly. Spread over baked cookie dough base.
- With the remaining cookie dough, drop by spoonfuls on top of the caramel mixture.
- Bake for 15-20 minutes or until light golden brown.

Ingredients
Bars
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter softened
- ¾ cup sugar
- ¾ cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 eggs room temperature
- 2 cups semi-sweet chocolate chips
Caramel Sauce
- 5 ounces evaporated milk
- 1 bag 14 oz caramels
- ½ cup peanut butter
Instructions
- Preheat oven to 375 degrees Fahrenheit. Grease a 9 x 13 inch pan and set aside.
- Combine flour, baking soda and salt in small bowl. Beat butter, sugar, brown sugar and vanilla in a large mixing bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually mix in flour mixture. Fold in chocolate chips.
- Spread half of cookie dough mixture into the prepared pan.
- Place in preheated oven at 375 degrees Fahrenheit and bake for 8-10 minutes. Remove from oven.
- While the cookie dough is baking melt caramels and evaporated milk in a double boiler. Add peanut butter after caramels are melted. Melt thoroughly. Spread over baked cookie dough base.
- With the remaining cookie dough, drop by spoonfuls on top of the caramel mixture.
- Place pan back in the oven at 375 degrees Fahrenheit and bake for 15-20 minutes or until top is light golden brown. Remove from oven and let cool before serving.

Made these last night and they turned out perfect. They look exactly like the picture!! For those stating too sweet – make sure you are using EVAPORATED milk and not CONDENSED milk as that would make them way too sweet. Thank you for such a yummy recipe!

This recipe is fantastic, my whole synchro team loves them. The only thing I’ve started doing now that they came out with Peanut Butter MINI M & M’s is sprinkle them on the top after the spoonfuls of second half of cookie. Just adds an extra and fun layer.

Can these bars be stored in the freezer until I need them? I’m thinking about trying them in a dessert box to give for Christmas gifts. Buy I would like to bake as much ahead, as freeze as I can until I give them out.

Yes! I would make sure you let your bars cool completely before freezing and then wrap them up tightly to preserve their freshness! That sounds like a gift I would love to receive!!

Directions were not clear towards the end. Do not put spoonfuls of batter on top. Completely cover the top.

I drop spoonfuls, it will spread and cover the majority of the bars. The directions are clear on dropping the spoonfuls.

I wanted to love this so badly. The flavour is totally there. I followed the recipe to a T and the middle caramel base is way too gooey. Even after letting it cool and “set” this didn’t improve. Super disappointed.

Did you chill the bars before cutting? I found them a little difficult to cut as they were so gooey.

They are a bit easier to cut once they are chilled (if you can wait that long before digging in!)

Hi Khayla! We use Kraft America’s Classic Individually Wrapped Candy Caramels, which can be found at a few stores. They are not hard candies, but more soft, toffee like. I hope this helps!

I was curious about this too? I didn’t like the peanut butter taste could I just omit peanut butter or will consistency not turn out? Is there something else I could add to get same texture if pb can’t be omitted?

The texture would definitely change if a nut butter of some sort isn’t added. I haven’t personally tested the recipe besides what is listed but you could try other nut butters like almond!

This recipe is so yummy! I made it with natural chunky peanut butter and it turned out great. The peanut butter made it a little less sweet. My husband said, “Holey moley these are good!”
