Lemon Blueberry Dump Cake ~ Quick & Easy Dessert Loaded with Blueberry Pie Filling and topped with Lemon Cake! Only Three Ingredients!
Does anyone else feel like they spend their entire Saturday running around like a crazy person trying to catch up on all the things that got pushed aside during the week or is it just me? I always have at least three loads of laundry to get done, mail to put away, the clutter to go through, toys to pick up, dishes to do, the blog to work on and the list could keep going on and on if you wanted me to but I won’t bore you with that. What happened to the days where I was on top of things and I could sit down and read a book? Oh, wait I got married and had kids that’s what happened! As much as I love my little family some days I would like to put my feet up and relax with a good book! Hopefully that will happen this summer at the lake. I really, really hope it does! For some reason it’s just easier to do that there where I’m not staring at my house and all the things I really should be doing. I can’t enjoy the book then!

That brings up the question of when will summer actually be here? At the beginning of March good old Mother Nature toyed with us Minnesotans and brought us amazing weather were it was in the 60’s and we were all hoping for a nice warm and long spring. Then she felt the need to bring us back to reality with snow and temperatures in the 30’s. I knew it was to good to be true but I was hoping and praying it was. Apparently it didn’t work did it? So since it’s still winter here I’ve been trying to ignore it with all things lemon. Sounds like the perfect solution right?

Since it seems like I’m always running around crazy like I need quick, simple and easy recipes. I’ve teamed up with Lucky Leaf again this year to bring a few of these treats to you featuring their delicious pie fillings. It’s a great product that I feel 100% comfortable promoting! I know when I grab a can of pie filling it will be loaded with berries or fruit! First up on the agenda is this amazing Lemon Blueberry Dump Cake. It only has THREE ingredients. That’s right folks. Three. I mean how can you mess this up or claim that you don’t have time to make it? You simple can not claim that. You can dump it all together in about 5 minutes, throw it in the oven and look like the rock star I know you are when you have a delicious homemade dessert for your family even though life is hectic and crazy.

Lemon Blueberry Dump Cake
Ingredients
- 2 21 oz cans Lucky Leaf blueberry pie filling
- 1 15.25 oz lemon cake mix
- 1 c. butter melted
Instructions
- Preheat oven to 350 degrees.
- Pour pie filling in a 2 1/2 quart casserole dish sprayed with non-stick cooking spray. Top with dry cake mix. Pour butter evenly over top of cake mix.
- Place in oven and bake for 50-60 or until cake is cooked through and edges are golden brown.
- Remove and let cool. Top with Cool Whip if desired.

I wanted to love this so much! Lemon, blueberry, how can you go wrong. With the two cans of blueberry pie filling and the cup of melter butter the cake just does not set up all the way through and this is a very mushy liquidy mess.

Can I use fresh blueberries in this recipe ?

I haven’t tested this one with fresh blueberries. You need more of a blueberry sauce for the bottom. I don’t know how the fresh blueberries would work, unless you turned them into a fresh blueberry sauce first.

I love dump cake recipes. I was wondering, does anyone know if it makes a difference if I mix the butter with the cake mix or just pour it on top? Thanx for all the amazing recipes. I’m trying this one today.
