We all love Peanut Brittle for the holidays! This quick and easy Peanut Brittle Recipe is made in the microwave which makes it the BEST and EASIEST Microwave Peanut Brittle Recipe a quick and easy Christmas Candy! If you are nervous to try to make homemade candy like this don’t be. I was too, but this recipe makes it so easy and fool proof. It’s a great beginner recipe to try!
Love peanut brittle, but scared to make it? Making candy is sometimes overwhelming, but this easy Microwave Peanut Brittle is fool-proof, plus so quick and easy. No one will know it was made in the microwave. This is the first time I’ve made Peanut Brittle. As much as I love it I was always scared to make it because candy thermometers intimidate me. Then I came across this recipe which is made in the microwave and it doesn’t require a candy thermometer. Easy, peasy! Honestly you guys. It’s delicious too.
It’s perfect for making to adorn Christmas trays or make a bunch and give to neighbors and friends for gifts this holiday season. Whatever you do with it they people that get to eat it are going to love you!

White Chocolate Puff Corn, which is perfectly sweet and salty. Did I mention it’s as easy as this delicious Microwave Peanut Brittle? Luckily for us, there’s still a few handfuls of that left!
Microwave Peanut Brittle Ingredients
- Sugar
- Corn syrup
- Salt
- Unsalted peanuts
- Butter
- Vanilla
- Baking soda
How to Make Simple Peanut Brittle Recipe
- In a microwave-safe bowl, combine sugar, syrup and salt. Microwave on high for 5 minutes.
- Stir in peanuts. Microwave again, stirring after 3 minutes.
- Cook in the microwave until syrup and peanuts are light brown.
- Stir in butter, vanilla and baking soda until light and foamy.
- Spread on buttered cookie sheet. When cook, snap into pieces.
Tips & Tricks!
- Have your cookie sheet buttered before you make the peanut brittle because it sets up fast.
- You can also use parchment paper to pour your brittle onto.
- Wondering why we use baking soda? Baking soda makes the brittle tender by adding air bubbles, giving it a porous texture.
- To store this candy simply layer the brittle in an air tight container and place parchment or wax paper between the layers.
- Peanut Brittle will keep in an airtight container for up to two months so it’s a great make ahead candy.
- Switch things up and substitute the peanuts for cashews, walnuts, hazelnuts or pecans.

Microwave Peanut Brittle Recipe
Ingredients
- 1 c sugar
- 1/2 c. corn syrup
- 1/8 tsp salt
- 1 1/2 c. unsalted peanuts
- 1 Tbsp butter
- 1 tsp vanilla
- 1 tsp baking soda
Instructions
- Combine sugar, syrup and salt in a microwave safe bowl. Microwave for 5 minutes on high.
- Stir in peanuts. Microwave 3 to 5 more minutes, stirring after 3 minutes. Microwave until syrup and peanuts are light brown. Stir in butter, vanilla and baking soda until light and foamy. Spread on buttered cookie sheet.
- Cool and break.

I have made this recipe twice now this Christmas season, and it worked perfectly both times!! Also, the second time I sprinkled coconut on my sprayed parchment paper and poured the mixture on top when done—amazing!!! To help mine spread out, I spray a spoon with cooking spray and just keep running it over the top of the mixture to spread it out to my liking. This will always be my go to recipe!!! Did not work out. Cooked and stirred exactly as recipe said and did not “brittle”. Very chewy. I have a new powerful microwave and was watching for color to change but was afraid if i let go any longer it would be too ling. Exact time of 5 minutes then added peanuts and stirred put back in for 3 minutes then stirred then put back in for two more minutes. Pulled out added butter and vanilla and baking soda. It did foam but nit brown enough

Waiting for it too cool. It looks right. I have a new microwave. Cooked 5min added peanuts cooked 3, stirred and only cooked 1 more minute instead of 2.

Not foolproof. At all. A gigantic mess of inedible concrete. No spreadable with any utensil I tried – wood,metal or silicone. Not the best recipes I’ve tried.

I’ve been making this peanut brittle for years. Everybody expects their pkg of it at Christmas time, haha. Such a great microwave recipe! I use a corning ware dish with the removable handle. Works great!! Just don’t forget to remove the handle when you place it back in the microwave. 🙂

Can I use golden syrup instead of corn syrup? This brittle looks delicious and so easy to make, but it’s difficult to find corn syrup here in UK. Thanks for sharing the recipe.
I think it would from what I read, it will produce a more buttery flavor but I think that would be good!

I use a large flat bottom measuring cup makes eaiser to poor than a bowl and I don’t get burned. The flat bottom mixes easier. Love the penut brittle

Not a baker or candy maker(or a poet!) However, I have made the Microwave Peanut Brittle 3 or 4 times now. Turned out great every time. Only problem, is that it is so good, that we eat it all right away. (oh darn) Tip: The bowl gets very hot in the Micro, and tricky to handle without burning yourself. I use a 2 quart Pyrex “measuring” bowl with single handle. With oven mitt you can manage it with one hand, while you scrape out the mixture with the other.
