No Bake Strawberry Cheesecake Icebox Cake Recipe ~ This Easy, No-Bake Dessert is Perfect for the Hot Summer Months or Anytime! Layers of Cheesecake Pudding, Cool Whip, Graham Crackers, and Fresh Strawberries Make this a Refreshing Dessert!
It’s STRAWBERRY season! Can I get a “Heck Ya” from you guys out there? Scream it! Dance it! You know you love it. My girls beg me for strawberries all year long and I feel kind of bad feeding them terrible strawberries in the winter although they don’t seem to mind. When it’s actually strawberry season and they are plump and juicy I hand them over to them all the time. I also love to stuff them in every recipe I can think of like Strawberry Ice Cream, Skinny Strawberry Banana Ice Box Cake, and Strawberry Lemon Fluff Angel Food Cake!
It’s also that time of year that school is winding down and coming to a close. I hear Moms all over screaming a HECK YES as everyone is about at their limit and the kids are pretty much over school at this time of they year so it’s like pulling teeth to get them to do anything, My girls aren’t old enough for this so I have no insight on this and I’m sure they’ll never act like this. Ha. Not.
My question for you is do you look forward to the life of summer? Doing what you want, when you want. No schedules to adhere to for the most part. Sunshine in abundance!
I definitely look forward to summer. I crave it. I need it. I love the weekends at the lake where I can unplug a bit do to no wi-fi. I’ve often thought about getting it up there for the summer months, but I have held out. I need some off time!
Although I seem to be a lot like Moms with kids in school. By the end of the summer I’m ready for the crisp fall days. I’m ready for weekends at home to catch up from the summer. As much as I love my lake weekends I get to the point where I’m totally over packing up the family every weekend!

No Bake Strawberry Cheesecake Icebox Cake Recipe
Ingredients
- 2 3.4 oz packaged cheesecake flavored pudding mix
- 4 c. milk
- 24 graham crackers
- 16 oz Cool Whip
- 2 lbs fresh strawberries washed and sliced in half
- 1/2 c. graham crackers crumbs
Instructions
- Prepare the cheesecake pudding mixes according to directions using 4 cups of milk. Set aside.
- In the bottom of a 9x13 pan place a single layer of graham crackers. Spread 1/3 of the cheesecake pudding on top of the graham crackers and then a 1/3 of the Cool Whip on top of the pudding mixture followed by 1/3 of the sliced strawberries.
- Repeat two more times.
- Refrigerate at least 4 hours or overnight before serving.
- Sprinkle with graham cracker crumbs before servings.

I shared this cake at work, and everyone loved it (especially one coworker, who named it “strawberry heaven”). I used vanilla pudding instead of cheesecake, but the flavor was just as good!

Can fresh blueberries be used instead of strawberries and would u use same amount?

Yes! I would leave them off the top until you serve it or the blue will bleed into the topping!
