Easy No Bake Cookies with your favorite S’mores flavors perfect when you are craving a S’more and don’t want to make a fire! The sweet and salty combination in these Ritz S’mores Cookies is irresistible. With only four ingredients this is a really easy recipe!

Easy No Bake S’mores Cookies
These sandwich cookies are a sweet and salty treat you are going to love! They have everything you love about s’mores turned into a sandwich cookie.
They’re easy to make and I’m sharing all of my tips so they turn out perfectly for you!
These are great for the summer when you’re craving s’mores but they are also a great addition to holiday cookie platters. I love to make these an avalanche cookies for the most marshmallowy fun!
The best part is they are a no-bake cookie! I think you’ll really love this s’mores sandwich cookie recipe – I know I do!
Ingredients for S’mores Cookies
- Ritz crackers – These are the best crackers for this recipe. They’re buttery and delicious plus sturdy enough. I wouldn’t substitute a generic brand, they tend to break easily.
- Marshmallow crème – Look for this in the baking aisle.
- Chocolate almond bark – This melts really well so it’s easy to dip and coat cookies evenly.
- Crushed graham crackers – You can crush whole crackers yourself or look for a box of graham cracker crumbs in the baking aisle.
- Marshmallow bits – These are itty-bitty marshmallows that I use to decorate the the cookies but they’re optional.
- Mini chocolate chips – These are optional, too, but are a cute way to decorate the cookies.
Variations
You can switch up the flavor and use extracts in the chocolate! Once you’ve melted the almond bark you can add:
- Peppermint or mint extract for a holiday twist.
- Almond extract is a great flavor to try!
- Or, add some vanilla extract for an extra flavor boost.

How to Make No-Bake S’mores Cookies
Fill: Place the crackers on wax paper. Spoon a small amount of the marshmallow crème in the center of each Ritz. Top each one with another cracker and lightly press them together.
Dip: Use tongs to dip each sandwich cookie in the melted almond bark. Allow the excess chocolate to drip off and place the coated cookie back on the wax paper. Repeat with the rest of the batch.
Decorate! Sprinkle marshmallow bits, crushed graham crackers, and mini chocolate chips on each cookie before the chocolate coating dries.
Can you use marshmallows for the filling?
Yes, but you will need to bake the cookies in order for it to work. I like the creme because you get that oozy filling without having to turn on the oven.
But, if you prefer to use marshmallows you can! Cut a large marshmallow marshmallow in half and place one half on a cracker. Bake them for two minutes at 350°F or just until the marshmallows start to melt.
Place the other cracker on top and gently press so the melted marshmallow squeezes to the edges.
Recipe Tips and Tricks for S’mores Cookies
- Filling Tip: Don’t add too much marshmallow filling – you only need a small amount. If you add too much, the marshmallow crème will ooze out and mix with the chocolate coating when you dip the cookies.
- Melting Tip: Melt the almond bark in short intervals, stirring between each. There should be instructions on the package so be sure to follow them.
- Wax Paper: I recommend using wax paper instead of parchment paper. Once the cookies are set, they are really easy to remove from the wax paper.
- Storage Tip: Once the chocolate has hardened, store the Ritz s’mores cookies in an airtight container. They will keep well for up to five days.

Ritz S’mores Cookies
Ingredients
- 48 Ritz Crackers
- 7 ounces Marshmallow Crème
- 24 ounces Chocolate Almond Bark
- 1 cup Graham Crackers crushed
- Marshmallow Bits optional
- Mini Chocolate Chips optional
Instructions
- In a microwave-safe bowl, melt chocolate almond bark, in 40-second intervals, stirring after each interval, until completely melted.
- Place Ritz’s crackers on a long sheet of wax paper.
- Add a small dollop of marshmallow crème to the center of half the crackers and smooth out.
- Place another cracker on top of the marshmallow crème. Press crackers together, ensuring the marshmallow crème has been distributed evenly.
- Use tongs, or a place on a fork, to grab a cracker sandwich and dip it into melted chocolate.
- Carefully tap tongs on the side of the bowl, removing extra chocolate from the crackers.
- Place dipped cracker onto the wax paper.
- Sprinkle graham cracker crumbles, tiny marshmallows, and mini chocolate chips on top, if you choose before the chocolate dries.
- Allow chocolate to harden.
- Store in an air-tight container for up to 5 days.
