White Chocolate Raspberry Cheesecake Cookies ~ Copycat Subway cookies but even better! Now You Can Make Your Favorite Cookie at Home!
Ok you need to RUSH to the store to get these ingredients for these White Chocolate Raspberry Cheesecake Cookies. Don’t wait the months after finding this recipe to make them.
These babies are to die for. They taste just like Subway’s White Chocolate Raspberry Cheesecake Cookies but they stay soft for days. Subways…well they don’t so much. So see homemade is better!
I made a double batch of these because I just had one of those feelings. You know how I finally made these or why? Well my sis-in-law had been asking me to find a recipe like Subway’s cookies so I found it…and then it collected dust until my nephew texted me one night at 9 pm asking for cookies. I had to inform him it was almost my bedtime so those cookies would have to wait a night. I’m old ok?
Then he told Grandma the next day that I was making him these cookies and well he thought it was for my blog obviously. Duh. Got that nephew trained. So I went home, found out I was out of cream cheese, my dear neighbor rescued me, she got a plate of cookies, the nephew got a plate, I brought some to work, I brought some to a fundraiser.
You know what happened? People posted on FB about these cookies they were that amazing. Oooh and aaahing and saying they were going to steal them. One coworker had 4 then Snapchatted me pouting because I snatched the container when I went home.
Another time I made these I brought them to an old co-worked at a car dealership. Apparently his wife LOVES these White Chocolate Raspberry Cookies at Subway and he made her day when he brought some home. I’m glad I can help husband’s win brownie points with their wives!
So here’s the moral of the story. MAKE THESE NOW. Ok?
White Chocolate Raspberry Cookie Ingredients

One other tweak I made was that I didn’t have shortening, so I used Canola oil…..

I made these for my husband, who loves just about anything raspberry. I tweaked your recipe a little by adding chopped macadamia nuts (the sea salt on the nuts are awesome with the sweetness of the white choc chips!). I also added about 2T of raspberry syrup.
I’m posting my comment now, as I go to make batch #2. I’ve been making all kinds of cookies for years and my husband says that these are my best yet and his fav!
BTW, they do form better cold, so mixing tonight to bake tomorrow.

Thanks for the tips! All excellent additions. Glad you enjoyed them!

I tried this recipe because I love the cookies from subway. Just like other people have stated, my cookies came out dry and had a muffin like texture and also lacked cheesecake flavor. I chilled it for about 45 minutes and followed the recipe exactly. I will have to try to alter this recipe to make it more similar to the Subway cookies
Julie Evink says
I’m sorry it didn’t turn out Vicki!
Heather says
Kinda disappointed with how mine turned out i skipped the chilling part because i was short on time and they puffed up like muffins!!! they also have the texture of muffins lol
Julie Evink says
Chilling is essential! Try it again with this step when you have more time 🙂
Ani says
Hi,
Would it be possible to shape these cookies or will they just spread out into a blob shape while baking?
Julie Evink says
I’m thinking it would just be a blob 🙁

I made these cookies today and followed the directions to a t..however, they didn`t turn out looking like the above picture. Instead my cookies looked like the tops of muffins. Puffy and they didn`t deflate either. I felt that there wasn`t enough cream cheese taste to them. They were okay but not comparable to the subway cookie. Thanks for the recipe.

Hi, I tried these cookies and the are soooo delicious , thanks you.
I have a question , how you then very nice rounded and smooth?
They always came with me in random shapes 🙂
Julie Evink says
Hmmm I use a cookie scoop so they are always the same size and come out like that! Do you have one of those?
jana says
Hi,
is it possible to bake these cookies without the jiffy raspberry muffin mix? I’m living in Germany and we don’t have that mix and I couldn’t find any raspberry mix. can anyone help out? I just ate that cookie today and I would die for another one right now!
Julie Evink says
Do you have any type of muffin mix like a triple berry or anything? I would think any brand would work. You could always look for a recipe for Raspberry Muffins and try to use that. Just make sure you use the same total weight to replace the muffin mix if that makes sense!
carol says
Janna, I’ll send you some if you’ll send me some Feigling 😀
Jen says
I live in Australia, and we don’t have Jiffy raspberry muffin mix – do you know of anything similar?
Cheers!
YAY for subway tasting cookies! 😀
Julie Evink says
Oh no! I have no good suggestions for what to use 🙁
Jen says
Guess I’ll try a few different muffin mixes – we have blueberry, and mixed berry type mixes! I’ll let you know which I find is best 🙂
Grace says
I’ve made these a bunch for my hubby! He asked if I could make a chocolate raspberry cheesecake cookie with white chocolate chips. I’m wondering if I could just add some coco powder to this batter? Would it end up too thick?
Jocelyn says
These are delicious! I found the muffin mix at Fred Meyer. Thanks so much for sharing a unique cookie recipe.
Julie Evink says
Thanks Jocelyn!

My mother-in-law was talking about a delicious recipe she saw in the Federated paper for raspberry cheesecake cookies and I laughed because I figured I knew where that recipe came from! 😉 She really wanted to make them, but said she couldn’t find the muffin mix in Morris. Where did you get it in Alex?
Julie Evink says
I actually had my brother’s girlfriend hunt it down in Grand Forks. I think she found it at Wal-Mart? Maybe we should tell Willie’s to carry it!!!!
Danielle Green says
Ya, I haven’t had much luck trying to get Willies to carry things. A few months ago I talked to Paul and the deli guy about carrying lean(er) ground turkey and that was a no go. I guess people are happy with the frozen 20% fat ground turkey. 🙁 It just sucks when you try to buy everything local and then have to drive 60 miles for just one or two things.
Julie Evink says
I might have an “in”. I’ll see what I can do! Haha!
Deb says
Well, I live in Bemidji and the mix is not available. Thought about trying to get it through Amazon but it’s $4-5 a box there. Nasty! Did you ever try other muffin mixes to see what could possible work?
Julie Evink says
I never tried anything else. But a reader above commented this “I couldn’t find the raspberry muffin mix from jiffy. I used the triple berry muffin mix from Betty Crocker and got amazing results.”
julie says
You can purchase any kind of “Jiffy” mix right from their website.
Julie Evink says
Great tip!

LOVE this flavor combo! I’ve never tried the Subway ones but now I don’t need to!! 🙂
Julie Evink says
Thanks Cathy! One you start you won’t be able to stop 🙂

Darn you, I was going to post these! Ok, I have to actually make these first! I’ve been thinking about these cookies. Now seeing them on your blog is making me so hungry! Looking good Julie!!! Now, I know I HAVE to make these ASAP!
Julie Evink says
Try them!!! And then still post them 🙂
Kari says

Julie Evink says

Julie Evink says
Yes it does
