White Chocolate Raspberry Cheesecake Cookies ~ Copycat Subway cookies but even better! Now You Can Make Your Favorite Cookie at Home!
Ok you need to RUSH to the store to get these ingredients for these White Chocolate Raspberry Cheesecake Cookies. Don’t wait the months after finding this recipe to make them.
These babies are to die for. They taste just like Subway’s White Chocolate Raspberry Cheesecake Cookies but they stay soft for days. Subways…well they don’t so much. So see homemade is better!
I made a double batch of these because I just had one of those feelings. You know how I finally made these or why? Well my sis-in-law had been asking me to find a recipe like Subway’s cookies so I found it…and then it collected dust until my nephew texted me one night at 9 pm asking for cookies. I had to inform him it was almost my bedtime so those cookies would have to wait a night. I’m old ok?
Then he told Grandma the next day that I was making him these cookies and well he thought it was for my blog obviously. Duh. Got that nephew trained. So I went home, found out I was out of cream cheese, my dear neighbor rescued me, she got a plate of cookies, the nephew got a plate, I brought some to work, I brought some to a fundraiser.
You know what happened? People posted on FB about these cookies they were that amazing. Oooh and aaahing and saying they were going to steal them. One coworker had 4 then Snapchatted me pouting because I snatched the container when I went home.
Another time I made these I brought them to an old co-worked at a car dealership. Apparently his wife LOVES these White Chocolate Raspberry Cookies at Subway and he made her day when he brought some home. I’m glad I can help husband’s win brownie points with their wives!
So here’s the moral of the story. MAKE THESE NOW. Ok?

Can you use more shortening than butter? Butter seems to flatten the cookies more on other recipes. Love the cookies!
Julie Evink says
I’ve tested it with all butter and all shortening and it didn’t seem to make much difference, but yes you can substitute that!
Carol Schmidt says
They look delicious
Julie Evink says

Have made these 2x but with blueberry and mixed fruit, have not been able to find the raspberry My family and friends loved them. THIS IS A KEEPER
Julie Evink says
Love that you tried different mixes! The raspberry is hard to find. I’ve had to get it on Amazon!
Ann says
The video shows using shortening but the recipe uses both butter and shortening. Do you use both ?
Julie Evink says
I’ve tested it both ways and both work, we slightly prefer using both, but once again it was super close so which ever you would like to do will give you excellent results!
Elizabeth says
The video just uses shortening while the recipe underneath calls for butter AND shortening. What did you use ?
Maryann says
Can I freeze these cookies after they are baked?
Julie Evink says
Yes they freeze great!
JT says
Instead of getting butter flavored shortening, can I replace it with regular butter? If so, how much do I substitute it with?
Julie Evink says
Yes you can. We’ve tested it both ways and it might yield a slightly flatter cookie but they are still delicious!
Michelle Sperr says
Hi JT – I haven’t use it with real butter but you could certainly try to substitute it. Otherwise, if you can’t find butter flavored shortening, you can use a different shortening that you have available to you.
Cathy Smith says
But you can get Wilton Clear butter flavor if you don’t want any yellow in there, otherwise, McCormick or whatever brand flavorings you get then you can get. That way you can use all your favorite shortening and 1/2 to 1 teaspoon of your flavoring. You can also use all butter, I personally love all butter cookies, but then I am an old southerner so I am all bout that butter
