Blonde Brownies

Who doesn’t love a soft, chewy brownie? These Blonde Brownies are just that! They are perfectly buttery, soft, chewy and loaded with chocolate chips for a perfect sweet dessert bar. Grab one and eat it plain or serve it with a scoop of ice cream and drizzle of chocolate for a fun twist.
This blondie recipe is perfect for bake sales, potlucks or anywhere you need a treat the kids will love. Their entire face lights up when they come home from school to a warm batch on the counter!
Don’t you just love dessert bars? I love making cookies, but baking up a dessert in a pan and then just slicing them is perfect when you don’t have a lot of time. These Blonde Brownies are just one of my favorite dessert bar recipes – you only need one bowl to make them and they are sweet, chewy, soft and buttery.
These are also known as “blondies” and they’re very similar to a traditional brownie except they’re made with brown sugar and vanilla instead of chocolate or cocoa powder. I like to add a little touch of chocolate with some mini chocolate chips sprinkled over the top.
This recipe makes a big batch so it’s perfect for all the bake sales, potlucks, BBQs and other fun events. But you can easily freeze the blondies, too, so you can have them on hand whenever you want a sweet treat!
Notes about the Ingredients
This recipe calls for your usual baking ingredients, but here are a few tips to think about before you make the bars!
- Start with softened butter: It’s a lot easier to mix softened butter, but it’s also really important for the texture of the bars. So, be sure to leave your butter out at room temperature for at least 45 minutes before you start making them.
- While you’re at it, leave your eggs out at room temperature, too! Did you know that it’s easier to incorporate them into the batter when they’re not cold? I don’t always remember to do this, but if you are leaving the butter out go ahead and take the eggs out too.
- How you measure matters! This is especially important for flour. Instead of using the measuring cup to scoop the flour out the container, use a spoon and lightly spoon the flour into the cup. Then use a knife (or another straight-edge utensil) to level the flour off. Too much flour will make your bars dry and dense, so the spoon and level method will ensure you have the right amount.
Variations
I like to keep these simple, but you can add some other mix-ins if you want to dress them up!
- Add some chopped nuts to the batter or sprinkle them over the top. Walnuts, almonds or pecans would work well!
- You can mix the chocolate chips into the batter, too, and try mixing it up – dark, milk, or semisweet chocolate would be so good.
- For fun, you could try using white chocolate chips or even peanut butter chips!
Recipe Steps
This is an easy one-bowl blondie recipe! Yay for less clean-up, right?
- Mix the butter, sugar, eggs, baking powder, vanilla and salt together in a large bowl. Add the flour and stir until combined.
- Spray a 10×15″ jelly roll pan with cooking spray and pour the batter into it. Sprinkle chocolate chips over the top of the batter.
- Bake for 20 to 25 minutes or until the middle is set and the top is golden brown. Cool them in the pan before slicing and serving.
Do blondies have the same texture as brownies?
These blonde brownies are similar but not as fudgy as some brownie recipes. They have a softer crumb, but they shouldn’t be cakey. For the best texture, just be sure to not overmix your batter. Just mix long enough so you don’t see any flour. If you work the flour too much it will develop the gluten which will change the texture of your bars.
How do you store them?
Wait until the bars are completely cool before you slice them. At that point, you can keep them in an airtight container and they will keep well for up to a week at room temperature.
You can also freeze them! Store them in a freezer-safe container and the will keep well for up to three months. To thaw, just leave them out at room temperature.
These always get rave reviews when I make them! My favorite is surprising my kids with them as a special after-school snack – I just love seeing the smiles it brings to their faces! I think your family will love them, too.

Ingredients
- 1 cup Butter Softened
- 3 cups Brown Sugar
- 4 Eggs
- 1 teaspoon Baking Powder
- 1 teaspoon Salt
- 2 teaspoons Vanilla Extract
- 3 cups All-Purpose Flour
- 1 cup Chocolate Chips
Instructions
- Preheat oven to 350 degrees F. Grease a 10'' x 15'' jelly roll pan with non-stick spray and set aside.
- In a large mixing bowl cream butter and brown sugar together until light and fluffy.
- Add eggs, one at a time and mix after each addition until combined.
- Then add baking powder, salt and vanilla extract and mix until combined. Add flour, one cup at a time, mixing after each cup.
- Spread batter into prepared pan. Sprinkle chocolate chips evenly on top of batter.
- Bake 25-30 minutes at 350 degrees or until set in the middle and golden brown on top.

Best blonde brownie recipe. I used 2 cups brown sugar and 1 cup regular sugar once, as I didn’t have enough brown and they were still delicious. I also use an an extra tablespoon of butter. Everyone loves and requests these!
