Flourless Peanut Butter Cookies

These quick and easy Flourless Peanut Butter Cookies only require six ingredients that you probably already have! They are chewy, dense and delicious, plus naturally gluten-free. If you love peanut butter then you are going to love these easy cookies.

Need to stock your cookie jar? With only a handful of ingredients, I bet you already have, these quick and easy Flourless Peanut Butter Cookies are the answer. They are soft, chewy and dense just like a cookie should be.
The best part is they don’t make to many cookies, about 15, which for me is always great because I tend to eat them in a day or two! The more I have around the more I eat, right?
If you want to make a treat for a gluten-free friend these are the perfect gluten-free cookies to make because they don’t require any special ingredients and no matter if you are gluten-free or not you’ll love them!
Ingredients for Flourless Peanut Butter Cookies
I’m guessing you already have these ingredients in your house, which is perfect for whenever you have a craving for an easy cookie.
The main ingredient is peanut butter which adds fat and substance to your cookies making them soft and dense. I wouldn’t recommend using natural peanut butter for these cookies as they can become oily. If you choose to use natural peanut butter, make sure to stir very well so that there is no oil separation before you add it in with the other ingredients.
3 Steps to Prepare
- Mix – In a medium sized mixing bowl add ingredients and stir to combine.
- Roll – Form 2” in balls with dough, we recommend using a 2” cooking scoop, and place on a parchment lines baking sheet. Leave 2 inches between each cookie. . Using a fork, flatten and create a crisscross pattern on each cookie. You may need to dip your fork into granulated sugar if the dough sticks to your fork.
- Bake – Place cookie sheet in oven for 8-10 minutes or until golden brown along the edges. Transfer cookies to cooling rack.
Optional Add-ins
Even though these peanut butter cookies taste great on their own, they are a great base for additional ingredients. Add in about 1 cup of whatever you would like to add into these cookies. Some options are:
- Chocolate chips
- Walnuts or peanuts: you can even add in crunchy peanut butter if you would like an easy crunch.
- Dried fruit: you can add in raisins, golden raisins, dried cranberries, etc.
Storage
- Room Temperature – You can store your cookies at room temperature for 7-10 days. Make sure to store them in an airtight container to avoid them becoming stale.
- Freezer – These cookies also freeze well! You can freeze them for up to 3-6 months in an air tight container for best quality. Just pop them into the microwave at half power in order to eat.
Expert Tips!
- A quick way to get a little crunch in these cookies is to use crunchy peanut butter instead of creamy.
- Mix up the flavor and use a honey roasted peanut butter instead of regular.
- Don’t not over bake, you want them to be soft, so pull them at 10 minutes. They will continue to bake on the pan when you cool them.
- Love chocolate and peanut butter? Dress these up by melting a few chocolate chips and drizzling them with chocolate.
- Don’t forget to criss cross the tops with the fork. This batter is denser than regular cookie dough and this helps to bake the cookies more evenly.

Flourless Peanut Butter Cookies
Ingredients
- 1 c. peanut butter creamy
- ½ c. granulated sugar
- ½ c. light brown sugar gently packed
- 1 tsp vanilla extract
- 1 large egg lightly beaten
- 1 tsp salt
Instructions
- Preheat oven to 350 degrees F.
- Add all the ingredients into a medium sized mixing bowl and stir to combine.

I just made these tonight and they’re so good, my only complaint is that I didn’t make a double batch! The dough is really easy to work with and I don’t have a cookie scoop so I just weighed out the dough and divided it evenly, rolled them into balls by hand and didn’t make a huge mess in the process. If you’re a food scale user these are the weights I used:
222 grams peanut butter
98 grams white sugar
68 grams light brown sugar
40 grams egg
