Can we talk breakfast? I love breakfast! I just wish I loved mornings as much as I love breakfast. In my perfect world my husband would get up every morning and greet me with a hot breakfast and a big cup of coffee to start the day. Unfortunately, my life is not perfect therefore I don’t get a hot breakfast every morning! But, hey, a person can dream right?
I’ve told you before that Sunday mornings were my favorite when I was growing up because I knew that Mom was going to prepare a hot breakfast and I loved waking up to the warm aroma wafting downstairs to greet me in the morning. Memories of childhood are just the best! Maybe I can convince her to come stay over night and greet me with a warm breakfast the next morning even if she only lives seven miles away!
Some my favorite breakfast recipes are Easy Homemade Pancakes, Homemade Waffles, Crunchy Pecan Banana French Toast, and Overnight French Toast Casserole! You can bet these are smothered with my favorite Hungry Jack syrup! The best part of the pancakes is you can totally make them on the weekend, double the batch and warm them up for a quick, warm breakfast during the week! My kids love this!

Loaded Egg Bacon Cheese Waffles

Ingredients
- 6 eggs
- 1/4 c. milk
- 3 1/4 c. Hungry Jack Complete Belgian Waffle Mix
- 2 c. water
- 6 slices bacon cooked and crumbled
- 2 c. shredded cheddar cheese
Instructions
- In a medium size mixing bowl whisk together eggs and milk. Heat skillet over medium-low heat and scramble eggs. Remove from heat.
- In a large mixing bowl whisk together waffle mix and water until smooth. Mix in eggs, bacon and cheese.
- Prepare waffle maker according to manufacturer’s directions. Pour about 2 cups of batter into waffle maker. Close and cook according to manufacturer’s direction.
- Serve hot with syrup.

These were great! I didn’t have the waffle mix so just used 3 cups of bisquick instead of the mix and 2 cups milk in place of the milk & water and they turned out perfectly. My husband put syrup on his, but I just had butter on mine and it tasted just like a breakfast sandwich.
