Pumpkin Lasagna Dessert ~ Creamy, Delicious Pumpkin Dessert with Layers of Gingersnap Cookies, Vanilla Pudding and Pumpkin! You Won’t Be Able to Stop with One Bite!

Ahhhhh, Fall. It’s here! October is here! So there’s going to be LOTS of pumpkin happening around these parts. Mostly sweet recipes because I just haven’t ventured to the whole savory pumpkin recipe thing! Have you? Some of your favorite sweet pumpkin recipes have been Pumpkin Angel Food Cake, Frosted Pumpkin Bars and Easy Pumpkin Dump Dessert! I have to say that I made Pumpkin Bars for church a year or two ago and they were gone in a blink of an eye! I need to bring treats again in a few weeks and I’ll be making at least two pans this time!

Speaking of church, after church today RyRy was on a roll! Miss K started going to Sunday School this year so we have about 45 minutes after church to waste. We took a drive this time and RyRy was our entertainment. As we were driving away the song, “Shut Up and Dance” came on the radio. Soon Ry was mumbling something to herself and shaking her bootie in her car seat. After I noticed that it was the same phrase over and over I decided to try to decipher what she was saying. Sure enough, every time they said Shut Up and Dance she’s say, Shut Up, Dance! It was halarious listening to this little kid say that and shake her stuff in her car seat while giggling!
Her other move lately is making monkey sounds. You ask her what sound the monkey makes and she screams, “Oooo Ooooo Ahhhh Ahhh” and giggles hysterically. I have no idea why I find this so entertaining but it’s incredibly halarious!

Then you have her devil moments. She’s now at the age where she’s learned how to push Miss K’s buttons and get a reaction out of her. I knew this was going to happen but I was really, really hoping it wouldn’t!
For example, tonight, the girls were having their bedtime snacks and Miss K was lying on the floor with hers watching the iPad while Ry sat on Daddy’s lap. Soon Ry climbed off his lap and proceeded to go walk on Miss K’s back. Needless to say Miss K was soon crying and on Dad’s lap. Ry looked at her, grabbed her own popcorn and put it by the iPad. Sweetly, she brought Miss K’s treat to her and promptly went and started watching the iPad. I swear, I swear she simply picked on her to get her away from the iPad!
You guys, she’s not even two. I’m in for it with these two!
You’ll probably find me face first in this Pumpkin Lasagna if they keep it up. Not that I would be sad about that. It’s AMAZING! I brought it over to the in-laws and it was devoured. Devoured. Mix things up this year and make this for a fall dessert instead of Pumpkin Pie!

Pumpkin Lasagna Dessert
Ingredients
- 1 c. crushed gingersnap cookies
- 1/2 c. butter melted
- 1 c. finely chopped pecans + pecans for topping
- 1 8 oz package cream cheese
- 3/4 c. powdered sugar
- 1 c. canned pumpkin
- 1/2 c. brown sugar
- 2 tsp pumpkin spice
- 1 16 oz container Cool Whip
- 1 1/2 c. milk
- 2 3.4 oz packages instant vanilla pudding
Instructions
- Preheat 350 oven to 350 degrees.
- Combine crushed gingersnaps, butter and pecans in a mixing bowl. Press mixture into the bottom of a 9×13 inch pan. Bake at 350 degrees for 15 minutes. Set aside to cool.
- In a different mixing bowl combine cream cheese, powdered sugar, pumpkin, brown sugar, pumpkin spice and 1 1/2 c. Cool Whip.
- Layer mixture on cooled crust.
- Combine milk and vanilla pudding mix until pudding forms. Spread mixture on top of cream cheese layer.
- Top with remaining Cool Whip and pecans.
