Cinnamon Frosted Pumpkin Cookies ~ Soft, Chewy Pumpkin Cookies Topped with Light and Fluffy Cinnamon Frosting!

Yes. I’m going there. Pumpkin. You know you love it. You want it. You crave it.
How do I know so much about you? It’s kind of scary isn’t it?
It’s because all of a sudden my pumpkin recipes are going crazy. Can anyone say Cinnamon Chip Pumpkin Cookies or Overnight Pumpkin Cheesecake French Toast Casserole? You guys all seem to be in the mood for it. I don’t really blame you, I mean it is a fantastic ingredient so why do we only eat it in the fall? Maybe you are a rebel and enjoy it all year long. Go you. I don’t blame you one bit!
Maybe you are looking for a new sweet treat to indulge in this fall. I bet you are dreaming of a soft, chewy cookie loaded with pumpkin and spices then it would be topped off with a fluffy cinnamon frosting. Am I right? I know I am!
Lucky for you today I’m making it happen. I saw your dreams and I met them, embraced them and this is the answer to them all. Just say Cinnamon Frosted Pumpkin Cookies!

Unfortunately my magical abilities stop with cookies and do not go onto magically making my house clean or my laundry done. Dang. I thought I was good!
You know what else is pretty cool about this amazing Cinnamon Frost Pumpkin Cookies recipe? The fact that I got to make it with the assistance of my favorite OXO tools of course! Cinnamon Frosted Pumpkin Cookies
Ingredients
Cookies
- 1/2 c. shortening
- 1 1/2 c. sugar
- 1 egg
- 1 c. pumpkin
- 2 1/2 c. flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp salt
Cinnamon Frosting
- 1/4 c. butter melted
- 1/4 c. shortening
- 1 1/4 c. powdered sugar
- 1 Tbsp milk
- 3/4 tsp vanilla extract
- 1/2 tsp cinnamon
Instructions
- Preheat the oven to 375 degrees.
- In a large mixing bowl cream together the shortening and sugar. Add rest of the ingredients and mix until combined.
- Drop by teaspoon onto greased cookie sheet. Baked 10-12 minutes or until edges are golden brown. Let cool on pan 3-5 minutes. Remove to wire rack and let cool.
- For the frosting cream together butter and shortening in mixing bowl. Slowly mix in the rest of the ingredients. Spread over cooled cookies.

You did manage to confuse me, however… The print link to get the recipe leads to the recipe, alright, but it is titled “Cinnamon Cream Cheese Frosted Pumpkin Cookies,” I went back to study it, and, nope! no cream cheese was harmed in the making of this recipe…

The cinnamon frosted pumpkin cookies. Can you use butter if you don’t have shorting?

Substituting the shortening for butter will change the texture of the cookie. I won’t say it won’t work, but it will be different than the one pictured.
