Rhubarb Dump Cake

When you have an abundance of rhubarb in your garden you need this quick and easy dump cake that’s perfect for the spring and summer! Rhubarb Dump Cake has a homemade rhubarb filling topped with a crunchy sweet topping.
The result is the perfectly sweet and tart dessert made with yellow cake mix and fresh (or frozen!) rhubarb. It’s so easy! I got this dump cake recipe from my mom and it’s one of my favorite ways to use fresh rhubarb. I also love making rhubarb pie!
But this rhubarb cake is so easy it’s hardly any work. You can use frozen rhubarb, too, so you can make it all year.

This is a mix, dump, and bake cake recipe that I love to make when rhubarb is in season – I grow it in my yard and I always get some from my mom, too, so there’s always plenty to use up!
You Will Love This Easy Rhubarb Dessert
- It’s a dump cake so you know it’s easy! You don’t need a mixer and it takes less than 15 minutes to prep.
- For this recipe, the dry cake mix is sprinkled over the rhubarb. I use a yellow cake mix and it makes the best rhubarb cake that’s sweet with tart pieces of rhubarb baked inside.
- My hubby even gobbles this one up and he’s a Mr. Rhubarb Hater. He loves the topping – it’s a crunchy sweet topping that melts in your mouth.
- This is a great dessert to make for a last-minute event or dinner with family. Or you can make it a day in advance and keep it in the fridge. Serve it warm or cold – both ways are great.
- It’s great plain or serve it with whipped cream or vanilla ice cream on top!
I can’t being to brag this recipe up enough. It’s so easy and so good – I seriously look forward to it every spring when we have fresh rhubarb.

Ingredients
- Rhubarb – you can use fresh or frozen rhubarb! Cut them into 1/2 inch pieces and, if you use frozen, just add some more baking time. The details are in the recipe card.
- Granulated white sugar – Balances out the tart rhubarb for the perfect flavor.
- All-purpose flour – Thickens up the sauce the rhubarb creates.
- Large eggs – Room temperature eggs will mix into the topping better.
- Milk – 2% or whole milk work great!
- Vanilla extract – Pure vanilla extract will give you the best flavor.
- Yellow cake mix – you can also use white cake mix.
- Melted butter – We use salted butter, but if you use unsalted butter just add a little salt to the recipe to balance the flavors.

How to Make It
Mix: Combine the eggs, sugar, milk, and vanilla in a mixing bowl. Stir in the rhubarb.
Dump: Spread the rhubarb mixture in the bottom of a prepared pan. Sprinkle the cake mix over the top. Top the mix with melted butter.
Bake! Place the pan in the oven and bake the cake until the top is golden brown.




Can I use Frozen Rhubarb?
Frozen rhubarb can be used. The cake will need an additional 15-20 minutes of bake time to cook rhubarb through.
What does rhubarb taste like?
Rhubarb is sour – really sour! But, when you combine it with sugar or other sweet fruit the sour flavor is tamped down. It’s not for everyone, but even my husband will eat rhubarb in this dump cake even though he’s not usually a fan!
Do you serve dump cakes warm or cold?
You can do it either way! I love to serve this rhubarb dump cake warm from the oven, but it can be served cold, too. If you refrigerate it, you can always reheat it in the oven or microwave before serving it.
Do you need to refrigerate dump cakes?
Yes, once the cake is baked and cooled, keep it in the refrigerator. It will keep well for up to four to five days as long as it’s tightly wrapped.

Rhubarb Dump Cake
Ingredients
- 6 cups rhubarb cut into 1/2'' pieces
- 2 cups granulated sugar
- 2 Tablespoons all-purpose flour
- 2 eggs
- 2 Tablespoons milk
- 1 teaspoon vanilla extract
- 15.25 ounces yellow cake mix
- ¾ cup butter melted
Instructions
- Preheat oven to 350 degrees Fahrenheit. Spray 9×13'' baking dish with non-stick spray and set aside.
- Mix eggs, sugar, flour, milk and vanilla in a mixing bowl. Stir in rhubarb and mix until combined.
- Spread rhubarb over bottom of a prepared pan. Evenly sprinkle dry cake mix over rhubarb mixture. Pour melted butter over top of entire mixture.
- Bake at 350 degrees for 45 min to 1 hour or until top is golden brown.
Tips
