I love things in mini size — it makes them so much more fun. Mini pancakes and mini pecan pie cheesecakes are two of my favorite tiny treats, but mini brownie bites are right up there too. Make a big batch of brownie bites to munch on throughout the week. They’re great for school lunches, after school snacks, and even a simple dessert.

- Cocoa powder – You can’t have brownies without cocoa! Grab that container from your pantry and use a big ol’ heaping cup to make these super chocolatey.
- Flour – Basic all-purpose flour will do the trick.
- Vanilla extract – Add more depth of flavor to your homemade brownie bites with a splash of vanilla extract.
- Butter – You’ll need quite a bit of butter, so make sure you have enough on hand before making this recipe.
- Sugar – Sweeten with both white sugar and brown sugar.
- Light brown sugar – If you only have dark brown sugar, that will work too.
- Salt – A little bit of salt will help cut through the chocolate flavor to balance the sweetness of the brownie bites.
- Eggs – Allow eggs to come to room temperature before mixing them into the brownie batter.
- Baking powder – Baking powder is the rising agent needed to make brownie bites light and fluffy.
- Chocolate chips – I use semi-sweet chocolate chips, but you can use milk chocolate or dark chocolate too.

How to Make Brownie Bites
- Preheat your oven to 350 degrees Fahrenheit and then lightly grease a 24 cup mini muffin pan and set it aside.
- Combine melted butter, white sugar, and brown sugar in a mixing bowl until smooth. Then add the eggs and vanilla and mix again.
- Add the salt and baking powder and mix until thoroughly combined. Then add the cocoa powder and flour.
- Once the batter is well mixed, fold in the chocolate chips.
- Use a cookie scoop or a spoon to scoop the mixture into the previously prepared muffin pan.
- Bake for 12-15 minutes, or until brownies are full set in the middle. Then let the bites sit in the pan for 10 minutes before removing.
- Grab a knife and carefully cut around the edges of each muffin to release them from the pan, then place onto a cooling rack until cooled completely.
- If you have any remaining brownie batter, repeat this process.
- Enjoy immediately or store for later!

Allow to cool completely before storing! Then transfer to an airtight container or sealable plastic bags. If you have to stack the brownie bites, then place parchment paper between the layers to prevent sticking.
Store at room temperature for 3-4 days. You can also store in the fridge to extend their life!
Can i Freeze homemade brownie bites?
Brownie bites freeze very well! Place them onto a baking sheet and pop into the freezer for a few hours. Then transfer them to a freezer bag or airtight container and store for up to three months. Allow to thaw before eating.
How do you keep brownies from sticking to muffin pans?
It is very important to spray your mini muffin tin well with nonstick cooking spray to keep them from sticking. If you know that your muffin tin is prone to sticking, then use mini muffin liners to help keep the brownies from sticking. It is also important to leave the bites in the hot pan for 10 minutes as they will finish cooking as they begin to cool.
What can I add to brownie bites?
Some creamy chocolate buttercream frosting would be fun topping to pipe onto your mini brownie bites. A cream cheese frosting or caramel drizzle would also be super tasty! You could even heat a bit of peanut butter to make a peanut butter drizzle.

- 12 Tablespoons unsalted butter melted and cooled
- 1 cup granulated sugar
- 1 cup light brown sugar packed
- 3 eggs room temperature
- 1 Tablespoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup chocolate chips
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Lightly grease a 24 cup mini muffin pan and set aside.
- In a mixing bowl, combine melted butter, and both sugars and mix until smooth.
- Add the eggs and vanilla and mix for another 2 minutes.
- Add the salt and baking powder and mix until combined.
- Add in the cocoa powder and flour and mix until combined.
- Mix in the chocolate chips.
- Scoop the batter into the prepared muffin pan. (makes 44-48 bites)
- Place pan in preheated oven at 350 degrees Fahrenheit. Bake for 12-15 minutes, or until the brownies are set.
- Let sit in the pan for 10 minutes then take a knife and cut around the edges of each muffin and remove them from the pan and let them finish cooling on the cooling rack. Repeat with remaining brownie batter.
