I’m in total denial. This weather has me believing it’s still September and not November like it really is! Therefore, holiday planning is not on the forefront of my mind at all. People are talking about Thanksgiving and planning Christmas and I’m over here going, “Aren’t those months away?!”
Unfortunately, my dream is coming to an end soon. There is snow in the forecast and my bubble is about to be burst. This snow thing is not only something I dread because I hate the cold, but also dreaded because my hubs got a new job a few months ago and it includes plowing snow for the state. I have this fear of him being gone every night because “people” say it’s going to be a horrible winter. I’m not really sure who these “people” are, but I fear them!
Maybe I need the snow to fly to start dreaming of the holidays. I did turn the Christmas music on this week. Shhhh all you naysayers! My husband already came in the house and promptly turned it off. Do you turn the Christmas music on before Thanksgiving or wait until the day after Thanksgiving? How about Christmas decorations? Before or after Thanksgiving?
I try not to push the envelope to much, so the Christmas decorations wait until after Thanksgiving, but I throw on a little Christmas music to get me in the mood!
Memories and traditions are a huge thing for me around the holidays. The memories of my childhood make me look back and smile, so I’m busy trying to provide the same things for my girls. Little things like putting the Christmas tree up the day after Thanksgiving or pajamas and a book for a Christmas Eve present they get to open before their other presents. Sometimes it’s the little things that become the most precious memories. I still remember my Mom and Grandma making Peanut Butter Ritz Cookies every year and you bet I do the same with my girls!
I’ve combined two of my favorite things! Creamed Corn and Macaroni! This Creamy Corn Macaroni and Cheese Casserole will soon become a trusted family favorite that will be asked for every holiday! Creamy Corn Macaroni and Cheese Casserole
Ingredients
- 16 oz dry elbow noodles
- 1/4 c. butter
- 1/4 c. all-purpose flour
- 1 1/2 c. skim milk
- 1 c. heavy whipping cream
- 1/2 tsp dry mustard
- 1/2 tsp onion powder
- 1 tsp salt
- 1/2 tsp pepper
- 1 14.75 oz can cream style corn
- 1 15.25 oz can sweet corn, drained
- 3 c. Crystal Farms® Wisconsin Sharp Cheddar Cheese Shredded
- 1/2 c. Crystal Farms® Grated Parmesan Cheese
Instructions
- Preheat oven to 425 degrees.
- Spray a 9x13 inch pan with non-stick cooking spray.
- Cook macaroni according to package directions. Drain and run under cold water.
- In a large saucepan melt butter over medium heat. Slowly whisk in flour. Slowly whisk in cream, milk, mustard powder, onion powder, salt and pepper. Cook over medium heat while stirring until thickened.
- Remove saucepan from heat and stir in cheese until melted. Add corn and mix until combined. Mix in cooked pasta until combined. Pour into prepared pan.
- Baked 20 minutes or until bubbly.

I am so thankful I found this recipe! I usually do the the velveta in the crockpot with corn. I will never use that recipe again. Hands down this is the best! It didn’t last at all! No leftovers and it tasted wonderful! I used large elbow noodles, and followed the recipe to a T and it’s a winner forever now in our home! Thank you, this is a great edition to our table for thanksgiving.

Tried a similar version of this but I’m probably the only one who thinks this but I do not like using cheddar cheese for Mac & cheese. It never melts well! Give me Velveeta any time!
