An easy, hearty soup perfect for the winter! This creamy Crock Pot Potato Soup uses cubed hash brown potatoes to make it so quick to make. Top it with shredded cheese, bacon, green onions and more.

Super easy and super cozy crockpot potato soup recipe! This is the best potato soup when it’s cold outside – it’s so thick, creamy, and hearty. It tastes like a loaded baked potato in soup form!
It gets cold where we live so I am all about the easy slow cooker soup recipes. My whole family loves this potato soup because it instantly warms you up! It’s creamy and so good.
If you don’t have a slow cooker, you need to try my stovetop cheesy potato soup or Instant Pot potato soup. They’re great, too!
Why This Recipe Works
- I use pre-diced packaged hashbrown potatoes for this recipe. It makes it so easy – no peeling or dicing. You can find them in the refrigerated section at the grocery store.
- The base of the soup is super creamy with cream of chicken soup. It gives the soup the best texture and flavor.
- Cream cheese thickens the soup and makes it even creamier! You don’t need a fancy roux to get the amazing texture.
- Of course, there’s bacon! It’s in the soup and then I love to add it as a garnish, too.
I really should call it baked potato soup because that’s basically what it is. With the toppings like bacon, green onions, and cheddar cheese it’s practically the same thing except as a creamy, delicious potato soup recipe.

Ingredients
- Cubed hash brown potatoes – or you can peel and dice the same amount of Yukon Gold potatoes or Russet potatoes.
- Low-sodium chicken broth – or you can use vegetable broth.
- Crumbled cooked bacon – I love to cook air fryer bacon!
- Cream of chicken soup – no sub for this, it gives the soup the best texture!
- Chopped yellow onion
- Black pepper
- Garlic powder – or mince one fresh garlic clove.
- Softened cream cheese – cut it into small cubes.
- Toppings – shredded cheddar cheese, crumbled bacon, and sliced green onions

How to Make It
Combine the potatoes, chicken broth, bacon, soup, onion, pepper, and garlic powder in the crock pot.
Cover and cook it on low for four to five hours or until potatoes are cooked through.
Add the diced cream cheese and cook it for 15 to 20 minutes or until the cream cheese is melted and combined.
Stir it well before serving. Top each bowl of potato soup with shredded cheddar cheese, crispy bacon, sliced green onions.
More Garnish Ideas
Here are other ways to garnish your delicious potato soup!
- Instead of bacon try cooked cubed ham or cooked diced pancetta.
- Swap the cheddar cheese for pepper jack cheese, Gruyere, or Colby Jack. Or do a mix of a few!
- Instead of sliced green onions, try sliced chives or chopped parsley. Or, sprinkle some finely chopped red onion over the top.
- Try adding small scoop of sour cream on top for a creamy, tangy finish!
Yep! For this slow cooker potato soup recipe, I use the prepared raw hashbrown potatoes that are cubed but you can also use potatoes that you peel and dice your self.
Potatoes have natural starch that is released when they cook. That starch helps thicken the soup! The cream cheese and cream of chicken soup also help thicken it.
Store the leftover potato soup in an airtight container in the refrigerator for up to three to four days. If the soup is too thick when you reheat it, add more chicken broth or even a little milk to thin it.

If you’re looking for some comfort food in a bowl, you have to try this creamy potato soup! It will definitely fill you up and warm you up on a cold day – my family licks their bowls clean every time I make it. Give this easy recipe a try this week!

If I want to make this for my vegetarian granddaughter who is visiting, can I substitute cream of mushroom soup for the cream of chicken soup?
Julie Evink says
Yes I think that would work fine!
