- Chicken breast – Use boneless skinless chicken breast for this easy parmesan crusted chicken recipe. You can also use boneless skinless chicken thighs.
- Ground pepper – Bring some warmth to the seasoning with a bit of ground black pepper.
- Dried parsley – Dried parsley is one of my favorite herbs to cook with! It brings so much flavor to a dish. Rosemary, basil and oregano would all be tasty too.
- Smoked paprika – A little smoked paprika is my secret ingredient to the most flavorful crust for this chicken.
- Garlic powder – Garlic powder will help bring depth of flavor to the breadcrumb parmesan mixture.
- Eggs – Dredge the chicken in eggs as a way to help bind the breading to the chicken breast.
- Italian seasoned breadcrumbs – If you do not have Italian seasoned panko breadcrumbs, you can use plain ones and mix in some Italian seasoning. Feel free to use gluten free bread crumbs if you want.
- Shredded parmesan cheese – For an extra fresh and tasty flavor, shred your own parmesan cheese.
- Olive oil – Cook your breaded chicken in olive oil to keep it from sticking to the bottom of the pan.

How to Make this Parmesan Crusted Chicken Recipe
Mix together Parmesan cheese, breadcrumbs, paprika, parsley, garlic powder and black pepper in a shallow bowl or pie plate.
In another shallow bowl, whisk together the eggs. Then cut the chicken breast in half lengthways to make 4 thin chicken cutlets. If needed, use a meat mallet to make the chicken even more thin.
Put butter and olive oil in a large skillet over medium heat. Swirl the pan to coat it evenly.
Dip the chicken in the egg wash, lift it out, and let the excess drip off.
Next, dip each chicken breast into the bread crumbs and pat them down to make sure that they stick.
Add the coated chicken to the hot pan and fry on one side for 4 minutes. Then flip and fry the next side for 4 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
Once cooked, move the chicken to a plate and let it rest for 5 minutes. Serve with your favorite sides and enjoy!

Allow chicken to cool completely and then transfer leftovers to an airtight container or wrap in plastic wrap or aluminum foil.
FRIDGE: Store in the refrigerator for 3-4 days.
FREEZER: Place wrapped leftovers into a freezer bag or airtight container. Freeze for up to 3 months.

Dip the chicken breast into the whisked egg mixture before adding the breading. This helps get the panko bread crumbs to stick to the chicken!
How do you make breading not fall off chicken?
Make sure that there is no excess moisture on the outside of the chicken breast before dredging it in the egg wash. That will definitely help bind the breading to the chicken.
It is also important to make sure that the oil in the pan is not too hot or the breading could fall off. Don’t touch the chicken with tongs while it’s cooking either or it could scrape some of the breading off.

- ¼ cup shredded Parmesan cheese
- ¼ cup Italian seasoned breadcrumbs
- ¼ teaspoon smoked paprika
- 1 teaspoon dried parsley
- ½ teaspoon garlic powder
- ¼ teaspoon fresh ground pepper
- 2 eggs
- 2 Tablespoon olive oil
Instructions
- Mix Parmesan cheese, breadcrumbs, paprika, parsley, garlic powder and pepper together in a pie plate.
- In another shallow bowl whisk together the eggs.

- Dip the chicken in the eggs and lift it out and let extra drip off.
- Next, dip each chicken breast in the bread crumb mixture. Pat to make it stick if needed.
- Add chicken breasts to the pan, you made need to do this in batches, and fry for 4 minutes. Flip the chicken over and continue frying until internal temperature of 165 degrees Fahrenheit, about another 4 minutes.
- Once they reach an internal temperature of 165 degrees Fahrenheit, move from pan and put on a plate and let rest 5 minutes before serving.
