Banana Zucchini Bread ~ Incredibly Moist, Easy and Loaded with Banana and Zucchini!

 A lot of times I get ambitious, like overly ambitious and it doesn’t turn out well. Take my garden for instance, my husband informed me just about mowed over half of it the other night because it was so hideous. Enter an epic fail here. So far my tomatoes and zucchini are growing. I’m pretty sure most of my beans and peas are a loss. There’s always next year right? Because I’m sure next year with another child it will even be easier for me to get out there and tend to my garden since I don’t even have time now.

Good thought huh?

Another example is the fact that I usually plant WAY more zucchini than I’ll ever need. Then I shredded and freeze it and throw it in the freezer. Then I promptly forget about it because I’m a food blogger and I’m making tons of new treats all the time and who wants to go back and use up that zucchini that I took time to freeze? Not I my friends, not I.  Or should I tell you about the bananas that are usually found laying in my freezer patiently waiting for me to use them up? Mots of the times they are long forgotten until I need a treat at the last minute and I go back to a tried and true recipe like my Frosted Banana Bars or if I’m craving banana bread in the dead of winter.

    Do you squeeze the water out of the zucchini?

    can i substitute the canola oil for vegetable oil? i do not have canola oil..? Also if i want to make only one loaf how would i cut this in half?

      Yes you can substitute the oils. To divide in half just divide all the ingredients by 2 and use one loaf pan.

    Can i use whole wheat flour instead of white…and organiccane sugar instead of white…

    Just made using whole wheat flour and organic sugar cane sugar….sprinkled chopped pecans on top….omg….deelish
