A fun and easy no-bake treat for St. Patrick’s Day. This Leprechaun Bark recipe has layers of Oreos, chocolate, Lucky Charms, M&Ms and sprinkles for a delicious treat that kids will flip over.
This leprechaun bark is just about the cutest St. Patrick’s Day dessert! But my favorite thing about it — it doesn’t require an ounce of baking. No bake desserts really are a God-send sometimes. If I forget to bake cookies or cupcakes, I make no bake treats like s’mores bars, peanut butter cheerio bars, and candy bark like this.
I can’t tell you the amount of times an easy recipe like leprechaun bark has saved my bacon. So, as long as you’ve got about an hour (the large majority of that is just chill time!) then you can make this candy. Plus, it is just absolutely adorable and looks like something a leprechaun would have a blast eating.

Ingredients for this Leprechaun Bark Recipe
- Chocolate chips – I use semi-sweet chocolate chips, but you can use dark chocolate or milk chocolate too!
- Mint M&Ms – I think this is my favorite part of this recipe. The mint is so tasty! But if you don’t like mint chocolate, you can use plain green M&Ms.
- Gold sugar sprinkles – You’ve gotta have a little gold on leprechaun bark! These gold sprinkles are perfect for that.
- Mint Oreo thins – You can also use regular Oreo thins if you do not like mint chocolate.
- Green and light green melting wafers – If you are unable to find green melting wafers, just use white and color with food coloring.
- Lucky charms marshmallows – Now you FINALLY have a reason to pick out all the marshmallows from the cereal…we all know they’re the best part! Or grab a pack of marshmallows and make it easier on you.

How to Make Leprechaun Bark
Line a large baking sheet with parchment paper and then line up Oreo thins to cover the paper. Set that aside for later!
Place chocolate chips into a medium size microwaveable safe bowl. Melt them according the package instructions being careful not to burn them.
When the chocolate is smooth and creamy, pour it evenly over the Oreo thins. Some of the Oreos may not be fully covered in chocolate, specifically the edge ones, but that’s ok!
Melt the green melting wafer and light green melting wafers in two separate microwave safe bowls. You can look on the back of the package for instructions on how to melt the candy.
Once smooth, either pour the mixtures into separate piping bags or grab a spoon. Drizzle each color of melting candy across the melted chocolate. Then sprinkle the gold sprinkles along the green colors.
Using a toothpick or a skewer, drag it across the melted green wafers and gold sprinkle to create a swirled pattern.
Decorate the leprechaun bark with M&Ms and Lucky Charm marshmallows and then carefully slide the baking sheet into the fridge.
Let it chill for about an hour until the chocolate is fully set. Use a sharp knife to cut the leprechaun bark into bite size pieces and then serve or store for later!
How to Store Leprechaun Bark
FRIDGE: Place leprechaun bark into an airtight container and store it in the fridge for about a week.
FREEZER: This yummy St. Patrick’s Day dessert freezes really well too. Just place it into an airtight container and freeze for up to 3 months.
I do not recommend keeping the bark at room temperature for longer than 2 hours because the chocolate will likely soften.
How to thaw leprechaun candy bark
Thaw this candy creation at room temperature! Either keep it in its container you can uncover it. If the chocolate forms any condensation, just dab it off with paper towels! Be sure to refrigerate it once its thawed.
What can I use in place of Oreo thins?
Oreo thins really make the best chocolate bark, but you can also use regular Oreos! However, keep in mind that there are tons of different Oreo thins flavors that you can look for. Golden Oreo thins would be super tasty and would look so cute too. If you don’t like oreos, feel free to use chocolate chip cookies or crunchy sugar cookies.
Pro Tips for the Best Leprechaun Bark Recipe
- Once you pour the chocolate over the Oreos, work quickly before it sets. It could be helpful to have another person helping you at this step!
- Feel free to add anything that you want to the decorations. Sprinkles, St. Patricks Day candies, pretzels — whatever you want!
- When cutting the bark, try to cut around the marshmallows so that they stay whole and look really cute.

Leprechaun Bark
Ingredients
- 13 ounce package of Oreo Thins mint flavor
- ¼ cup dark green melting wafers
- ¼ cup light green melting wafers
- 12 ounces semi-sweet chocolate chips
- ½ cup Lucky Charms rainbows and shamrocks
- 3 Tablespoons gold sugar sprinkles
- ½ cup mint M&Ms
Instructions
- Line a 9×13 baking sheet with parchment paper and line your Oreos up in a single layer over the parchment paper. Set aside.
- In a medium-sized heat-safe bowl, heat the semi-sweet chocolate chips according to package instructions. Don’t overheat the chocolate and make sure to stir it often to avoid the chocolate seizing and forming clumps.
- Pour the melted chocolate over the Oreo layer and spread it out over and between the Oreos until smooth. It may not cover all of the Oreos and it’s okay to have some Oreos sticking out of the chocolate along the edges.
- In 2 separate small bowls, heat the dark green and light green melting wafers according to package instructions. Use a spoon or piping bag to drizzle lines of dark and light green chocolate in lines or swirls over the melted chocolate layer.
- Next, sprinkle the gold sugar sprinkles next to the green chocolate lines.
- Using a toothpick or skewer, drag the chocolate-making swirls and lines through the green chocolate and gold sugar sprinkles.
- Finally, decorate with lucky charms rainbows and shamrocks, and mint m&ms and place the leprechaun bark in your refrigerator to chill for at least 1 hour.
- Once the chocolate has chilled and is hard, use a large knife to cut the bark into small randomly shaped pieces or break it apart with your hands for jagged edges.
- Serve chilled or at room temperature.
