- All purpose flour – I don’t recommend using a cake flour because the end result won’t be that traditional dense pound cake.

- Butter – We use unsalted, but if you use salted that’s okay too.
- Sugar – Use a granulated sugar to sweeten this pound cake.
- Sour cream – The secret ingredient for a moist cake. Also, the acidity in sour cream will activate the baking soda.
- Eggs – Be sure to take them out and let them to come to room temperature on the counter.
- Vanilla extract – Adds a depth of flavor to this strawberry pound cake.
- Strawberries – Quartered strawberries are added to the cake batter in addition to puréed strawberries for the glaze plus strawberries for topping!
- Powdered sugar – Powdered sugar is perfect for a delicious strawberry glaze because it is very fine and dissolves easily.

Prepare bundt pan by greasing with butter and then dusting with flour.
Whisk together flour, baking soda and salt in a mixing bowl, set aside.
Use a stand mixer with the paddle attachment to beat butter and sugar together until light and fluffy. You can also use a hand mixer if that’s what you have. Beat in sour cream until combined. Alternate adding dry ingredients and eggs; beat until just combined. Quickly beat in vanilla.
Toss strawberries and 2 Tablespoons of flour in a bowl then fold the strawberries into the batter.
Transfer batter to the prepared pan and bake in an oven preheated to 325 degrees Fahrenheit for 1 hour and 15 minutes or until golden and a toothpick inserted into the center comes out clean. Allow to cool in the pan for about 10 minutes before turning out onto a wire rack to cool completely.
Purée 6-7 whole strawberries in the blender. This should end up being 1/4 cup of liquid, if it isn’t, add more strawberries. Mix the strawberry purée and the confectioners sugar together until well combined.

- In a pinch, you can use strawberry jam to make the glaze.

- ½ teaspoon salt
- 1 cup unsalted butter (2 sticks ), at room temperature
- 3 cups sugar
- 1 cup sour cream
- 6 eggs room temperature
- 1 teaspoon vanilla
- 2 cups fresh strawberries quartered
- fresh strawberries for topping, optional
Glaze
- ¼ cup pureed strawberries about 6-7 strawberries
- 2 cups powdered sugar
Instructions
- Preheat the oven to 325 degrees Fahrenheit. Butter and flour a bundt pan. Set aside.
- In a mixing bowl, whisk together 3 cups of flour, baking soda, and salt to remove lumps. Set aside.
- With an electric mixer or stand mixer, beat butter and sugar together until light and fluffy. Add in sour cream and beat until combined. Alternate adding flour mixture and eggs; beat until just combined. Quickly beat in vanilla.
- In a bowl, toss together strawberries and 2 tablespoons of flour. Fold the strawberries into the batter.
- Transfer the batter to the prepared pan and bake in preheated oven for 1 hour 15 minutes or until golden and a toothpick inserted into the center comes out clean. Let cool in bundt pan for about 10 minutes before turning out onto a wire rack to cool completely.
- Take 6-7 strawberries and puree them in a blender. You should end up with ¼ cup of liquid, if you don’t add a couple of strawberries. Mix the strawberry puree and the powdered sugar together until well combined.
- Once cool, drizzle the glaze on top of the cake. Top with fresh sliced strawberries if desired.
