- Mexican cheese – You could also use a mild or sharp shredded cheddar cheese, or Colby Jack.

Freezer: We do not recommend freezing this dip. The texture will not be the same after it is frozen.

Can Corn Dip be made ahead of time?
Yes, this dip can be made ahead of time and stored in the fridge until ready to serve. Just make sure to give it a good stir before serving, as the ingredients may separate a bit as it sits.
How Long Can You Leave this Dip out at a party?
A cold dip should only remain out at room temperature for two hours. This is called the “danger zone”, which is room temperature.
If you are serving this and it will be sitting out for a period of time we recommend taking a larger bowl and putting ice in it then setting the bowl of dip on top of the ice to keep it cold.

Ingredients
- 1 can original Rotel 10 ounces, drained
- 2 cans corn and diced peppers 15 ounces each, drained
- 3 green onions chopped
- 1 cup sour cream
- 1 cup mayonnaise
- 2 cups Mexican cheese shredded
- Tortilla chips for serving

- In a bowl, mix all ingredients together and chill.

I’m sorry it’s taken so long for someone to reply to your question. “ROTEL” is a brand name for some diced tomatoes with mild green chiles so you could mix up some of your own if you don’t have the brand available.
