Sometimes I get REALLY enthusiastic over things. Like ridiculously so. It’s sort of embarrassing. Maybe more for the hubs and the rest of the family than me, but I go all out if my heart is behind it. For example this BLT Dip. I went all out with this. I’m referring to the eating part of this if you are wondering. I quite possibly could have just taken a spoon and ate it. I’m kind of in love with anything BLT and this dip did not disappoint at all.

Another thing I’m currently obsessed with is ordering allllll the clothes for Drops of Sunshine. I’m quite scared to look at my current credit card bill. Insert me slightly hyperventilating here. Someone should come hold my hand while I take a peak. You see, my friends decided it’d be a great idea for me to have an open house so everyone could come look at the product and try on the clothes if they lived in the area. It sounded like a great idea because I know I like to try on clothes, plus it’s girl time. I love me some girl time!

The problem was I hadn’t really stocked up on summer clothes due to the fact I had a child and was a bit busy this spring. In fact I hadn’t really done much at all with the boutique, yet I want it to succeed. That doesn’t happen without hard work I learned. After they left my house that night I decided they were right and I was going to have an open house. Then I started shopping.

That’s where it quickly went downhill. That is for my credit card bill. Maybe it went uphill because I know the bill went UP UP UP! So now I’m currently praying that someone will attend this open house and that those someones will buy something!

Personally, I’ve bought about one of everything that I have had come in!

Speaking of being excited and wanting to shout from the rooftops… I want to shout about these leggings that just came in. Like literally fresh out of the box. They are all sorts of amazing. Think buttery soft, thick, comfy etc. I’m slightly obsessed. Or majorly obsessed. We will let you decide. They are also available in capri length!!

Unfortunately I only got a few in because I was worried I wasn’t going to like them. Obviously I should have listened to my sales rep when she said I was going to adore them. Whoops. So now I’m offering them on pre-sale for 20% off!!! Only through this weekend. Then they go back up to regular price.

You guys, you NEEEEEEED them. Honestly. NEEEEEED them. Get the picture?

Ok, I’ll get off my high horse here on the leggings, but honestly listen to me.

Let’s talk about this dip.

A few things you need to know about this BLT Dip

  1. It’s stupid easy.
  2. Only requires a few ingredients
  3. You will inhale it
  4. So will your friends
  5. High Fives All Around

If you have a party coming up then this is what you want to bring! I mean it’s got BACON you guys. I need not say more.

If you don’t have a party then either plan one or make it and eat it alone.

Easy BLT Dip

Preparation 00:20 Cook Time 00:00 Serves 20     adjust servings

Ingredients

  • 1 (8 oz) pkg cream cheese, softened
  • 1/2 c. mayonnaise
  • 1/4 c. grated Parmesan cheese
  • 1 c. chopped lettuce
  • 8 bacon strips, cooked and crumbled
  • 5 plum tomatoes, seeded and chopped
  • 1/4 c. minced green onions
  • 1 1/2 c. shredded Colby Jack Cheese

Instructions

  1. In a medium sized bowl, beat together cream cheese, mayonnaise, and Parmesan until blended. Spread in shallow baking dish and pie plate.
  2. Layer lettuce, bacon, tomatoes, cheese and onions on top of cream cheese mixture.
  3. Refrigerate until serving.
  4. Serve with toasted baguette slices, chips etc.
