This Corn Dip Recipe is addictively good and it’s so easy that any can make it for a quick snack or appetizer. This recipe is full of flavor from corn, tomatoes, green onions and cheese. You will be addicted to it in no time. Cheesy Corn Dip is so delicious!
Corn Dip
So I’m guessing we are all cookied out after the big Christmas Holiday…am I right?I love me some Chocolate Dipped Peanut Butter Pretzels but my there’s only so many I can eat.
Well at least for a few weeks. After that, I’m all up for another round of sweets! Right now though my pants are a little more snug, my fluff is a bit more fluffy and let’s just say there may be more love handles to grab after the holiday season.
So I’m kickin’ the treats and cookies to the curb.
I figure since party season is here we should move on to my love of dip. Dippity do dah, dippity do dah…. Tasty dips like Crockpot Buffalo Chicken Dip, Layered Taco Dip and Kickin Ranch Corn Dip. YUM!!!
Corn Dip Recipe
Ok, focus Julie. Cheesy Corn Dip. That’s what we are having! It’s super easy, super yummy and you’ll be loading your chip with it! Just ask Miss K what she thought of it.
She MAY have loaded that chip right up with dip and then proceeded to lick the dip off and never eat the chip. The child is weird. She does the same thing with salsa. Doesn’t even matter if it’s got a little bit of bite to it. She inhales it.
Grocery List for Corn Dip Recipe
- Rotel
- Corn and diced peppers
- Green onions
- Sour cream
- Mayonnaise
- Mexican cheese
- Tortilla chips
If my kiddos inhale, you definitely need to give this a try and feel good about it too because just think … getting the kids to eat more veggies? Winner, winner!!!

If you are looking for a simple dip for New Years or watching a few Bowl games then this is calling your name! I love serving this in my famous football chip dip bowl! It’s so cute and fun!
I love that I can make it up ahead of time so entertaining is a little bit easier.
It also makes a great appetizer to bring to parties because it’s easy to transport. Just grab the bowl of dip and the bag of chips and you are set to go!
Easy Peasy is the name of the game around these parts.
How Do You Make Cheesy Corn Dip Recipe

Mix all the ingredients together in a bowl and refrigerate.

Corn Dip Recipe
Ingredients
- 1 10 oz can original Rotel, drained
- 2 15 oz cans corn and diced peppers, drained
- 3 green onions chopped
- 1 c. sour cream
- 1 c. mayonnaise
- 2 c. Mexican cheese shredded
- Tortilla chips
Instructions
- In a bowl mix all ingredients together and chill.
- Serve with tortilla chips.

Oh I know how you feel about all of the cookies and sweet treats! I’ve been eating them sparingly for the past two weeks and I feel so much better! Ha, I had to start before Christmas because I was feeling bleh. I limit myself to one cookie per day. LOL
