I love recipes that give you all the fixing for a meal in one pan! It’s so awesome to stick it in the oven, let it bake and run around like a crazy person trying to get everything else done that needs to be done in life. Wait, did you think I relaxed while this baked? I wish! That is not the season of my life right now! Someday I keep thinking it will be again, then I’ll be wishing for the chaotic moments that have passed me by in life. Or, that’s what people tell me anyways! Although, it would be nice to sneak in a nice bubble bath for myself at least once in a while. Now, that my friends, I could handle!

The best part of this was that everyone in the family loved this meal! Now, that my friends, is saying a lot. With a four year old and a two year old eating it’s always a gamble in life. One minute they LOVE something and I stock up on it. It lasts approximately 2.3 days and they are onto the next love in their life. My pantry is stocked with random things they refuse to eat anymore.

One thing Miss K loves right now is “healthy green beans” as she calls them. She begs for them. Literally. When we go to the grocery store she heads straight to the produce section to get them. That is after she grabs her donuts. That girl also has a donut addiction. Balance right? At least she likes something healthy too!

Green Beans, Chicken & Potatoes

Prep Time 15 minutes Cook Time 1 hour Serves 4 servings     adjust servings


  • 3 medium yukon gold potatoes, diced
  • 2 c. green beans, cut into 1 inch pieces
  • 1 lb chicken breasts
  • 1/2 c. butter
  • 1 (.7 oz) package Italian dressing mix


  1. Cut green beans up. Line one side of the pan with green beans.
  2. Cut potatoes up. Line opposite side of pan with the potatoes.
  3. Line the chicken breasts down the middle of the baking dish.
  4. Cut butter up and layer over the green beans, potatoes and chicken. Sprinkle Italian dressing over the entire pan. Cover with foil.
  5. Bake at 350 degrees for 1 hr.

Baking time will depend on how big you cut your potato pieces and thickness of chicken breasts.

      Hi, thanks for the recipe! I needed to make something fast, simple and healthy. I have it in the oven right now. Instead of green beans and white potatoes, I put Zuqinni, broccoli, and sweet potatoes! I hope it turns out good! Invited my girlfriend for the first time so I really hope it turns out good!

    Yummy, this is one of my favorite– and easiest recipes!! I add breadcrumbs to top of chicken and chop garlic and throw it in there! I spice it up pretty good also before putting Italian seasoning over it all!!!

      I made this last night. Super good. Instead of the green beans (only because we were out ha) I put big chunks of red onions and green peppers over the chicken. Cooked it at 360 for 1 hour covered and 20 minutes uncovered. Delicious! Thanks for the ideas for next time!

          The only thing I can see is the asparagus might take a little longer to cook through then green beans!

    I found this on pinterest & have tried it 3 ways, whole stick of butter, 1/2 a stick, and just a little bit of oil. My fave is the oil. I felt like there was just too much butter before.
    I like the other commenter’s suggestion of adding breadcrumbs!

        I have made with italian salad dressing instead of oil….just drizzle some all over! Its great!

    Very good!! Agreed, could cook with less butter and probably have great flavor still, but this way was excellent!! I cooked 1 hr with foil and added 20 min at end uncovered. Also sprinkled a small amount of parmesan cheese on chicken and potatoes. Empty pan …full bellies x5 🙂

    It probably would have been helpful for me to measure the oil but I didn’t. I just drizzled a little on, enough to coat & allow the seasoning to stick. The Parmesan cheese that Lisa added sounds good!

    Do you think this would work with pork chops and other seasonings besides the Italian packet?

      I would sure think so! Just make sure to adjust the time to the cook your pork chops and also not over cook them 🙂

        How would you adjust the cook time? What sesonings would you suggest with pork chops?

          It really depends on what type of pork you do and how thick of chops or pork loin slice you do! Just make sure it reaches the correct internal temperature. I would like 45-60 minutes.

    I only have canned green beans… do you think that will make a difference?
    Also did you use oil instead of butter or both together?

      I’ve only used fresh green beans, my thoughts is that they might get mushy because they don’t need to cook as long maybe? I’ve only used the butter on it. I’ve never tried oil but someone else has and commented on this post they just drizzled the oil over the ingredients.

        I used canned green beans and it was good. I am making it tonight and plan to season the chicken more with some salt, pepper, and cajun seasoning. That is just our personal preference though.

            I ended up cooking the green beans separately because we had guests and my dish wasn’t big enough for all of it. I added the cajun seasoning and a little garlic salt to the chicken and potatoes before I put them in the pan. Then I sprinkled the packet of seasoning over the entire thing. I used unsalted butter since I used so much seasoning. (I wish I had taken some earlier advice and used about half of what I used!) It was very good!

      I used oil and zesty Italian on chicken. I used fresh green beans but canned will do. I let this all marinate over night.

    I made this last night and it was DELICIOUS! I did the same thing you did i pinned this recipe a while ago and never made it. But I’m glad it tasted so good! The only complaint I had was the chicken was pretty dry/tough….I baked for an hour at the 350 I wonder if next time I should do onle 45mins?

      Pinterest is the best invention for women EVER! Did you cover it with foil? That could cause it to dry out if you skipped that step….

      I put my chicken in frozen. Comes out perfect. Mine took a little longer than 1 hour. Just test it. If chickens done, it’s yummy. I make this all the time. Chicken is tender and real juicy
      .. I use frozen green beans and red potatoes.. 🙂

    I am not a big fan of green beans, any other vegetables that would work instead?

      Bailey, I read somewhere that you could use broccoli. When I cooked it, I didn’t have room for the green beans in the pan so I just cooked the chicken and potatoes with the same seasonings and butter. If you did that, you could just cook a vegetable you like separately or even a salad would be great! Hope that helps!!

      I just made this tonight! I’ve used a variety of fresh vegetables and everything seems to work. We did a broccoli/cauliflower mix and chopped up sweet potato this time. I’m anxious to try the breadcrumbs!

      I would think it would work okay, but i wouldn’t use any butter or oil and try not to use too much.

    Had this for dinner.. it was sooo good. Didn’t have the Italian packet so just used garlic, salt, pepper and red chili pepper flakes. Used 1/2 stick butter and just a tiny bit of Olive Oil. It was so simple and had so much flavor. Used yukon gold potatoes. My new favorite and go to for a simple but yummy meal! Thank you!!

    This was yummy but I didnt have italian mix but I took the idea and used liptins onion mix. Yummers!!!! I am sure the italian mix would have been just as good

    I’m wondering if you could substitute sweet potatoes for the russet potatoes….has anyone tried that?

      I tried it with sweet potatoes and it was delicious! I was worried that the italian seasoning wouldn’t pair well with the sweet potato but it did! I think I like it even better than other potatoes. I have used pork chops instead of chicken too and it was tasty! The possibilities with this dish are endless!!

        I used sweet potatoes and russet. I just microwaved them for four minutes before putting everything in the oven. I actually liked the sweet potatoes better.

      I love this with sweet potatoes. I usually just cut the pieces up a little smaller to make sure they get done.

    I used frozen chicken and ended up having to double the cook time. Also, I used only half of a stick of butter and canned green beans, and it was still wonderful!!! Will make this again!

    Can the chicken be frozen at first does it need to be thawed?

      I would do thawed. If if it is frozen it will take a lot longer to cook through.

    Im using italian style mix instead of the dressing mix. i got them confussed but i think its going to be even better.

      I think you will be just fine! You can really use any seasonings you’d like 🙂

    I am doing this now an when the hour was up nothing was even halfway done :-(. I’m confident it wasn’t my oven. Not sure what I did wrong.

      Hmmm a ton of people have made it and no one has ever said that. Maybe the size of your chicken breasts or the amount you put in the pan? The more you put in that longer it would take to heat or the larger the pieces the longer it would take to cook through. That’s my only guesses!

        I’m having the same issue… thawed chicken, beans and potatoes.. nothing was even remotely cooked. Chicken was still cold in the center. Used a 9×13 dish. I came here to see if I did something wrong. 🙁 And my oven is brand new.

      i had the SAME issue. just made it….chicken was not frozen….its been an hour and a half and only the chicken is done!!!!! really irritated. never making again.

      I added my fresh green beans right at the beginning and I had no problems!

    I used frozen green beans – everything else was thawed – after an hour the chicken that was on the same side as the green beans was still raw! Will try it again with fresh ones…but I just wanted to warn everyone!

      It might because you had something that was frozen in there and it took the temperature down and therefore takes longer to cook through. I did it with fresh green beans and thawed chicken and it works perfectly!

    I tried this recipe tonight as initially stated plus Italian breadcrumbs and Parmesan cheese and it was FABULOUS!! Added 10 minutes on the hour when I added the Parmesan cheese just to make sure chicken was done!! We will be making this again.

    I just made this for dinner tonight and it was delicious. I did deviate from the recipe because I read the recipe wrong. Instead of buying Italian dressing mix, I bought Italian dressing…oops. I seasoned everything with salt, pepper & garlic, then poured about half the bottle of Italian dressing over it all, and omitted the butter altogether. Everyone loved it, including the kids! I did have to cook it an hour and a half instead of just the hour, but very yummy!

      Oh that sounds great! I often marinate chicken in Italian Dressing and then grill it so I would guess it would be similar!

    as a fairly accomplished cook this is a great idea, something i never thought of before too. its very versatile as long as you use the three base ingredients — potatoes, green beans, and chicken all take approimately the same time to cook as long as you get the potatoes and chicken pieces roughly the same size. i would probably leave it uncovered — i don’t like covering anything. splash some sherry or wine or water or juice in the bottom to keep everything moist.
    i think people with cooking time problems are crowding smaller baking pans, the deeper it gets the longer you would have to cook it.
    the breadcrumbs idea is great, but i would pan-fry them with a little oil until it toasts and put it over after to serve for a really attractive presentation. its super easy, and you can add a little extra spice if you like. you have no idea how much flavor toasted bread crumbs can add until you have some. with a little paprika its a staple condiment in polish food and used in italian too, especially with green beans.

    I made this today and I added some baby carrots and instead of Italian dressing mix I used Grill Mates Tomato, Garlic & Basil Marinade. I just mixed the marinade as instructed, poured it over just the chicken. Cooked for 1 hour and 15 min at 350 and wonderful!! Thanks for this! I can’t wait to try with all different seasonings. Served this with garlic & cheese biscuits. YUM!

    I made 2 versions of this tonight. For starters I used 2 smaller pans, small russet potatoes, 5 quartered in each, and canned green beans. In one pan I used Italian seasoning on the chicken and then sprinkled the potatoes, in the other I sliced 2 large lemons, put a few on the bottom under the chicken, some in between and then a couple on top. Both turned out really well!!!

    The original recipe I was going to try called for lemons. After reading the reviews I decided not to make it. I had all the ingredients ready to go just needed a recipe to match. I am so glad I ran across this recipe.

    I made some minor additions. I sprinkled garlic and onion powder over everything before I did the butter and dressing. I checked it at 1 hour but the green beans were not cooked. I ended up cooking it for 1 hour and 20 minutes and then I removed the foil and let it cook for 10 more minutes. It is by far one of the best recipes I’ve tried. I think I am going to try and fix it in the crockpot next time and see what happens. I’ll update everyone on how that goes.

    Only used half stck of butter. Think next time I might marinade the chix in fat free Italian dressing and then use a wee bit of olive oil on the potatoes and green beans with the dry seasoning. Used fresh green beans and 1.5 lbs chix and one hour uncovered was perfect.

    Oh my gosh. I’m in love with this. Unused half the butter, added garlic powder salt and pepper to all of it before I did the other seasoning packet. And I took the foil off and cooked 10 minutes longer WITH some of that velveeta quest blanco on top of the chicken. And it was delicious. Will be doing this again. A million more times. 🙂

    After reading the comments I went with half a stick of butter, and just used 3/4 of the Italian seasoning bc I had only chicken and potatoes in my large dish. I also opted using asparagus instead of green beans in a small side dish. Popped the main dish in for an hour and added the asparagus for the last ten minutes (also upped the temp to 375 for the last ten minutes). Turned out fabulous and unfortunately had no left overs. Will make more next time!

    I cooked this last night and it was good. I used canned green beans and they came out really good. I had too many potatoes so it took a little longer for them to cook so I took the chicken out and cooked for 20 mins more. I didn’t want to overcook the chicken. My husband liked it too but asked if I could use seaoning next time because it was missing something, for him. All in all we really enjoyed it and I wll be cooking this more often and maybe adding a few things here and there. I can’t wait to try some of your other items!!

    Thanks for all the great suggestions….if you wait a while you get several good ideas….trying this with salad dressing and a bit of butter on potatoes and canned green beans….also added the Parmesan cheese and bread crumbs and even mixed a few french fried onions into the green beans….in the oven….Can’t wait to see how it turns out!

    I was going to make this with split bone in chicken breast with skin. Should I not add much olive oil or butter, maybe just over the veggies? I don’t have any Italian dressing mix, but I do have Ranch dressing mix. Has anyone tried this?

      I’m not much help on this one April 🙁 I would think Ranch dressing mix would work perfectly though. It’s just a different seasoning and am all about Ranch!

        The Ranch seasoning worked great. I also used just a little of Old Bay seasoning, not too much. I didn’t have green beans so I used asaragus and garlic cloves. The split chicken breast were very good. But you didn’t have to add much oil or butter. I uncovered it during the last half hour so the skin would brown. Thanks for the recipe!!

    When it says 1 PK Italian dressing do you make the dressing first or just sprinkle the packet on top? If you have to make it could you just use Italian dressing already made?

      It’s an prepared packet, but you can sub out for Italian Dressing already made, read the other comments for more ideas!

    Hmm, thinking of delivering this as a post surgery meal. But worried it will dry out on reheating. Not keen on delivering while the chicken is still raw-unless I we for a fact they were going to cook right away.

    Just made this tonight – delicious! I used 3/4 of a stick of butter and it turned out just fine. I also only cooked it for 50 minutes and everything was well done. Will definitely be making again at my college – perfect dorm meal!

    I made this tonight. I added fresh garlic and onion to the potatoes and green beans and cut the chicken breasts in half. I only used half the butter. My potatoes were a bit too big and were a little undercooked after the hour, so I removed the chicken and green beans to covered serving dishes, cranked the oven, and cooked them 10 more minutes. This was very good!

    Tried this tonight. Had my daughter, son-in-law and grandkids over for dinner. Everyone loved it. I had a problem with the potatoes. It took them along time to get done. I cut them in quarters like it said but next time I will cut them smaller. Defiantly a yummy, easy dish!

I try to fix an easy meal on the days I have been busy doing laundry, cleaning…so I figured this would be perfect for tonight’s meal! I used a medium sized bag of frozen green beans in mine. I also added some black pepper before pouring on the dressing. I’m fixing some rolls to go along with it..can’t wait to try it!!

    I used half a stck of butter and frozen green beans and it was wonderful. Next time I may usr my own spice mix to cut out some of the salt.

    Made this last night for dinner, tho I did add minced garlic, some seasonings to the chicken & I used Zesty Itailian Dressing, green beans & potatoes did take a lot longer to cook, but with the chicken in the dressing, everything turned out awesome!! Will make this again, but will blanch the potatoes & veggies in water first or maybe put them in a seperate dish & start cooking them first!!
    But everyone loved this dish & well be making this AGAIN…….thank u for the recipe 😉

    I made this dish one night last week and I figured I couldn’t go wrong with making a one pot dish. I did exactly what the recipe said to do but used a little less butter. I cooked it on the temp it says to, but after an hour the chicken was still raw, potatoes were like they hadn’t even been cooked, the green beans were still tough. So, I cranked the heat up to 400° and checked on it an hour later. The chicken was done by that time, so I wrapped it in foil to stay warm and took the foil off of the baking dish because the potatoes were still very hard. I put this dish in at 3:30 in the afternoon thinking it would be ready by at least 5:30 (when I normally have supper ready) and I kept checking on it every 30 minutes or so and at 6 PM the potatoes were still I continued to cook them and finally at 7:30 that night the potatoes were I turned the heat back down some and let the oven cool off a bit and put the chicken back in the baking dish to warm back up some more. I found that the dish was way too salty and the chicken was so dry and tough and the potatoes were still not as done as I like them to be. I had to end up throwing most of it away, and we all know that chicken and potatoes don’t run cheap!! I will definately not be making this again.. I fixed some rolls to go along with it and the rolls were the only thing that were good to eat. I told my husband that I didn’t expect him to eat it because I didn’t like it..he said after being married to me almost 7 years I’ve never fixed a bad meal, but to please not fix that again..I promised him I wouldn’t…hope everyone else has better luck with it than I did.

    I think I would like to try this with ham slices, chopped onion and slivered almonds with the green beans and garlic infused olive oil in the potatoes. It sounds delish and it would be a quick easy meals for my family of 6.

    Followed the recipe as directed. 50 minutes in and the chicken is raw and the potatoes aren’t cooked 🙁 Gonna try cooking for another 50 minutes at 375 degrees.

      So, I put it in for an additional 40 minutes at 375 which overcooked the chicken just a bit. I’m thinking maybe my oven is off a bit. The dish was super tasty. Will make again and cook for about 75 – 90 minutes at 350.

    I have heard so many people raving about this recipe so I tried it tonight and I was not impressed. I followed the directions as they were written and the chicken was dry and the potatoes were pretty lackluster. It wasn’t horrible but I won’t be making this again.

      I’m sure you could. If they are smaller it might take a little less time. Just watch it like every 5-10 minutes and check on it!

    I have done the original recipe and although it turned out yummy it was a lot of butter. I’m making it again tonight with half the butter and using Ranch mix instead of Italian to mix it up a bit.

    I just wanted to share my two cents here too. I was super excited to make this because it sounded easy, semi-healthy (with oil) and delicious, but as I was reading the comments (while the dish was in the oven) I was getting nervous about all the comments about the potatoes/chicken not cooking in an hour. WELL – I am happy to report that after just 60 minutes, my chicken, beans and potatoes were PERFECTLY cooked. My husband RAVED about the meal (and he’s the cook in the family!). We added cajun seasoning, the zesty italian dressing mix packet and garlic cloves. Also, we used olive oil instead of butter. Perfecto!

      I made mine in a cake pan (twice), I don’t have a glass dish. I would recommend oiling the pan a bit.

    Had this pinned on one of my Pinterest boards and cooked last week. I used baby blonde potatoes cut in half and after reading several comments I used half the amount of butter. This was absolutely delicious! My daughter loved the chicken. Will definitely be making this recipe again.

    This is in the oven now as I write, it smells delicious! I used fresh green beans and red potatoes. I also added several chopped cloves of garlic and a small onion sliced up under the chicken and in the veggies. Another thing I did was sprinkled a little salt and pepper all over my chicken before the Italian dressing on top! I’m using a large baking sheet that has a lip, lined with foil. I think having more surface area will help it cook more evenly. I covered it with foil and will cook it 30 min covered and 30 min uncovered. Will report back with results!! I’m so excited to try such an easy weeknight meal!!

      The dish turned out great!! Will be making again and again!! When I checked it at 30 min, it still wasn’t done so I upped the temp to 400 and let it go uncovered for another 20 min and it was perfect! Everything was cooked perfectly, and the chicken was slightly brown and pretty on top. So I’d suggest to use a large baking sheet, and cook 30 minutes at 375 covered and 20-30 minutes uncovered at 400! Happy cooking everyone!!

    I saw this recipe about two years ago & after the first time I made it my family LOVED it!! The only thing I did different was use red potatoes since they’re a lot quicker to cut up, & it has turned out perfect everytime!! This is definitely one of my favorite go to quick, no fuss, easy to make meals!

    This doesn’t seem to be the original recipe for t his dish that I had pinned on pinterest, or y p u have changed it slightly since I last made this last month. Anyway, I always use frozen green beans because they are cheap, and you don’t have to drain or cut them. They turn out wonderful every time. I also melt the butter first, so I can drizzle it over everything. Either that or I drizzle Olive oil over I instead. Another thing I do differently is I use Grill mates marinade packets instead of the Italian dressing mix. I usually get a packet of the zesty herb marinade and a packet of the tomatoes, garlic, and basil marinade and sprinkle half of each packet over the entire dish. It’s wonderful for those of us who don’t care for the Italian dressing mix.

    I just pulled this out of the oven- at 350 degrees for one hour, my red potatoes (cut in half and then again- plus they were “mini”) have come out undercooked. Boo 🙁 Other than that, the dish is great! The chicken is SO moist.

    This is a new family favorite at my house, except instead of Italian seasoning I use a packet of Onion Soup Mix, and I only use about half the butter and add some coconut oil to even it out. So yummy!!

    Made this tonight. Had some thin sliced boneless chicken breasts marinated in the freezer (balsamic, olive oil, + Garlic and Herb Mrs. Dash). I coated the pan with olive oil, then tossed the a bag of mixed baby potatoes, fresh string beans, and a sliced yellow onion. Seasoned with garlic and oregano. I laid the chicken on top of the veggies, covered in foil, and baked at 350 for a little over an hour. There was plenty of juice/oil at the bottom of the pan to spoon over chicken if desired. Will definitely make again!

    I loved this dish and so did my family. Here’s a couple of things I did.
    I put about 2 tbsp. olive oil in a large bowl, added 1/3 Good Seasons Italian packet and tossed green beans then put them in the baking dish. Added 1 tbsp. olive oil to bowl again, 1/3 seasoning packet and tossed potatoes, placed in the dish and then another tbsp. oil and the rest of the packet and tossed chicken then added to dish. I then opened another packet and sprinkled it on top, while moving the ingredients around a bit but did my best to keep them separate like the picture. This way, all ingredients would have seasoning. Potatoes were still hard, chicken in the middle was on the raw side and the green beans were perfect.
    For next time: Use a pan that’s big enough so that ingredients are in a single layer. Cut the potatoes even smaller. they were still hard. Maybe a little bigger than the size of dice would be best. I will put the potatoes all around the outside of the dish, then the chicken and the green beans in the middle. I think I would cook at 400 for 45-50 minutes and remove cover and cook for another 15-20 minutes.
    TRUST ME, THIS RECIPE IS WORTH THE WORK, although, it was super easy. Will make again and again, thanks for sharing.

    I made this tonight and substituted the green beans with asparagus and instead of using italian seasoning and butter, I used lemon pepper and garlic powder and sprinkled with parmesan cheese

    I have made this for several months now. The first time I made it I followed the recipe. The next time I changed it. Melted the butter moved the potatoes over and added to mini ears of corn frozen do not thaw. Put fresh asparagus where the green beans were and poured the melted butter over all of it yes the chicken too. Sprinkled Italian seasoning packet and Knorr vegetable dip packet. Covered with foil and cooked at 350 for one hour. You need to dice your potatoes small so they will cook . Other wise it is done and fabulous. Have given this recipe to a lot of friends even to a walmart shelve stacker. She was making dinner for her mom, they both loved it and her mom has pasted it on.
