Easy Air Fryer Roasted Sweet Potatoes
Who wants an easy side dish? Well, it doesn’t get any easier than these roasted sweet potatoes in the air fryer! They’re crispy on the outside and tender on the inside and they’re the kind of side dish that goes with pretty much any main dish! We love these easy roasted sweet potatoes with Parmesan Crusted Pork Chops and Honey Garlic Chicken Drumsticks!
As you probably know, I’m all about making things easy! Roasted vegetables are one of my favorite easy side dishes to make for dinner, but if the main dish is in the oven then it can be challenging because vegetables usually have to roast at a higher temperature. This makes it hard to do roasted veggies and it all ends up taking longer!
That’s one reason I love my air fryer! Now that we have one I love that I can make crispy, roasted veggies while the main dish bakes in the oven. These roasted sweet potatoes are seriously easy – just pop them in the air fryer and 15 minutes later you get crispy roasted potatoes! That’s a winner in my book!
Plus, the kids love these sweet potatoes. Roasting them brings out their natural sweetness and the kids just gobble them up. They are lightly spiced with paprika and garlic salt for extra flavor and they’re so delicious. It’s hard enough to get the kiddos to eat their veggies so when I find one that works I’m gonna stick with it.

Air Fryer Sweet Potato Cubes FAQs
It depends on the kind of air fryer you have, but most models take three to five minutes to preheat. Just turn the air fryer on to the temperature you want to cook the food at. Once preheated the preheating light will go off. For this recipe, you definitely need to preheat the air fryer first otherwise the potatoes will take longer to cook.
The easiest way to peel sweet potatoes is with a vegetable peeler. Once peeled you can dice them into 1″ pieces. First, slice the potatoes in half lengthwise. Place each half with the flat side down and slice it into pieces down the length of the potato. Holding those slices together, cut across the potatoes so you have 1″ cubes. Here’s a quick video on how to do it!
Yes, you can eat the skin on sweet potatoes. In fact, the skin has a lot of nutrients so it’s good for you! My family prefers peeled potatoes, but if you want to leave the skin on and roast the potatoes that way it will work just fine.
Sweet potatoes are very healthy. They have a lot of fiber and potassium. They have more natural sugar than regular potatoes, but they actually have fewer calories.
The key to getting crispy sweet potatoes in the air fryer is to make sure they aren’t overcrowded. The sweet potatoes need air to circulate around them in the air fryer to make them crispy.
It will take about 14 minutes to cook cubed sweet potatoes in your air fryer at 390 degrees Fahrenheit.
You can store leftover roasted sweet potatoes in an airtight container in the refrigerator for two to three days. They will lose their crispiness, but still taste delicious! Properly stored in a freezer-safe container, you can also freeze roasted potatoes for up to two to three months. Just make sure they are completely cooled before you wrap and store them in the freezer.
The fastest way to reheat roasted potatoes is in the microwave, but they won’t turn crispy. So, if want the leftovers to be crispy you should reheat them in the oven or use your air fryer again. Just spread them out on a baking sheet and roast them again at 400 degrees F for about 10 minutes or until they are crispy or put them in the air fryer basket at 400 degrees F and heat them for 4-5 minutes.

Great recipe! We love it!!
Have you ever made it using the yellow meated sweet potatoes? Up north we call the orange ones yams and the yellow ones sweet potatoes. Slightly different taste and texture. We love them both but most recipes show the orange varieties. Just wondering how the yellow ones would fare making this….. I am going to try that for dinner tonight.

A truly fast and easy AND delicious healthy recipe – play with the timing after you try it the first time if it isn’t as crispy as you like – I add a couple minutes on both cook times to get it to my liking (it may also be that my 1″ cubes aren’t to standard!).
My husband loves it too – and I’ve added leftovers to spinach salads with great reviews!
Julie says
Awesome! I’m so glad you both enjoy this one, and yes the leftovers are great for salads!

Diabetics can eat sweet potatoes! My husband’s sugar does not go up. You just have to watch the quantity. Califlower is excellent for diabetics and often used as a white potato substitute. I add it to my soups! No issue for my husband and again he is diabetic.
