Ingredients for Tater Tot Breakfast Casserole!
- Tater tots – You could also use shredded hash browns, but the tots make this breakfast casserole just perfect in my opinion.
- Bacon – Try making bacon in the oven if you you prefer that method. It’s super easy and cooks a lot of bacon at once.
- Breakfast sausage – You could also use diced ham in place of sausage! Turkey sausage and chicken sausage are a good replacement for pork.
- Yellow onion – Dice this finely and I bet the kids won’t even notice it’s in there but adds so much flavor.
- Cheddar cheese – Grab a block of cheese and shred it yourself for the best melty cheese results.
- Whole milk – Skim or 2% milk will work in a pinch.
- Eggs – The “glue” that holds it all together! I like to use large eggs in this recipe.
- Salt, pepper & garlic powder – These three simple seasonings give your tater tot breakfast casserole the perfect flavor.

Next add the sausage and onions to the baking dish, then crumble the bacon and put on top of sausage.

Recipe Variations
You can make variations on this tater tot casserole! Here’s a few yummy ideas to experiment with:
- Use egg whites instead of whole eggs.
- Switch up the cheeses! Use a Montery jack, Colby jack, or even Pepper jack for some kick.
- Add some diced bell peppers to the skillet with the onions.
- Spinach would be tasty in this yummy breakfast casserole too.
How to Store Leftovers
FRIDGE: Store any leftover breakfast casserole in an airtight container in the refrigerator for up to 4 days. Make sure it’s cool before you cover the container.
FREEZER: You can also store leftovers in a freezer safe storage container in the freezer for up to three months.
Make Ahead Tips
This simple overnight method is a great option for this easy breakfast casserole. You can prep it up to 24 hours in advance and store it in the refrigerator. When you are ready to make the casserole, bake according to directions. It may take an extra 10-15 minutes of bake time because it’s cold when you bake it.
This tater tot breakfast casserole is also freezer friendly. I like to double it and freeze one of the casseroles for an easy breakfast, and it’s perfect for a breakfast for dinner option. Use a layer of saran wrap over the casserole and then aluminum foil to help prevent freezer burn.
When you are ready to bake the frozen breakfast casserole thaw overnight in the refrigerator and then bake according to directions. Once again it will take 10-15 minutes longer because the casserole is cold when you bake it.

Pro Tips for the Best Tater Tot Breakfast Casserole
- For the most gooey and melty results, shred your own sharp cheddar cheese from a block. Pre-shredded cheese has anti-caking agents and doesn’t melt as well as freshly grated.
- Add some kick to this breakfast casserole with tater tots by using spicy breakfast sausage or adding in some red pepper flakes.
- You can season the egg mixture with more seasonings if you prefer! An easy way to change up this dish.
If you’re hosting a crowd soon, maybe breakfast with your best gal-pals or the family over the holidays plan ahead and you’ll be set! No stress, delicious and easy!

Do you have to bake longer if you refrigerate overnight ?
Also do you put frozen or thawed tater tots on in the morning?
Julie says
If you refrigerate overnight, it’ll just probably take closer to 60 minutes to bake. Use frozen tater tots, hope you enjoy!
Meghan says
This looks delicious and I plan on making this over the weekend and having it throughout the week. What kind of sausage did you use? Was it ground sausage or breakfast links or something else?
Julie says
I used ground sausage but you could try it with other types, whatever you have on hand!
Lynda says
In your conversation before the recipe, you say I can prepare this at night and sleep in. However, in answer to Gail above, you suggest leaving Tots off ‘til just before baking in the morning. Is there a specific reason for this? I’d really like to have everything ready to pop in the oven.
Julie Evink says
The Tots just sink to the bottom a bit that’s all 🙂 You totally can do it!
Gail McKelvey says
Julie, have you ever made this in advance and let it sit overnight before baking? Looks so good! I love the idea of tots rather than bread in a breakfast bake!
Julie says
I haven’t tried this but it would work! I would leave the tater tots off until right before cooking. Then just follow Step 6 to finish it up!
Heather Shields says
If prepping the night before, is it ok to add the tater tots or wait and add them before sticking in the oven?
Julie Evink says
Yes, I plan on doing that!
Tracy says
I assume the tots going in as the base layer?
Julie Evink says
As stated in the directions of the recipe plate the tater tots on top at the end of preparing the recipe.
Tracy says
Yikes. Sorry! I swear I read that recipe 3 times looking for it & apparently missed it every time.
Julie Evink says
No worries I do that too 🙂 Have a great Thanksgiving!
Alecia says
I’ve made this twice now, first time I used left over ham from Christmas and I sautéed diced green, red pepper, and onion then added ham to pan near end of sautée. The second time I did it with browning a roll of breakfast sauce with the peppers and onions. I didn’t have time to fuss with cutting up peppers and onions so I bought prefixed and it made the prep go so quick!
My family loves this recipe!!

Have you ever made this without the sausage and only bacon? Making it for a group and not everyone likes sausage, but of course everyone loves bacon! Just wondering how it would turn out without the sausage.
