Ingredients For Tomato Soup
- Butter – Adds rich flavor to this soup when used to sautee onions and garlic. You can use a neutral oil in it’s place if you prefer.
- Yellow onion – Diced yellow onion adds depth of flavor and complements the acidity of the tomatoes with its mild sweetness.
- Fresh garlic – Fresh minced garlic adds depth of flavor.
- Crushed tomatoes – You can’t have tomato soup without tomatoes! Use your favorite brand of canned crushed tomatoes. If you’ve already got canned whole tomatoes on hand, you can use them instead – just blend them first.
- Chicken broth – Chicken broth adds the perfect savory flavor you love in a comforting soup, but you can also use vegetable broth or beef if that’s what you prefer or have on hand.
- Fresh basil – Fresh basil adds a fresh burst of flavor to this soup. If you are unable to find some, you can use a heaping Tablespoon of dried basil in the soup. I don’t recommend dried basil as garnish, however.
- Sugar – A little sweetness added to the soup balances the flavors.
- Seasonings – All you need is salt and pepper to really enhance the flavor of this soup.
- Whipping cream – Creamy tomato soup is hearty and so comforting! A high fat cream will give you a nice rich soup.
How To Make Tomato Soup
- Melt butter in a Dutch oven then add chopped onions. Sauté 5-7 minutes, stirring occasionally, until softened and golden. Add minced garlic and sauté 1 minute or until fragrant.
- Add crushed tomatoes with their juice, chicken broth, chopped basil, sugar, salt and pepper. Stir together and bring to a boil then reduce heat, cover with lid and simmer for 10 minutes. Stirring occasionally.
- You can leave your soup with a chunky consistency, but if you like a blended/creamy soup, use an immersion blender to blend the soup in the pot to desired consistency or transfer to a blender in batches and blend until smooth. Then return blended soup to the pot over medium heat.
- Add the heavy cream and stir until combined. Season to taste with salt and pepper if needed.
- Remove from heat and ladle into bowls and top with more chopped fresh basil.
Storage And Reheating
Fridge: Store leftover soup, once cooled, in an airtight container for up to 4 days.
Freezer: Whether you doubled up the batch to freeze some for another time, or just want to freeze the leftovers, add tomato soup to a freezer bag and lay flat in your freezer. Thaw in the fridge overnight before reheating.
Reheat leftover soup in the microwave in 30 second increments or on the stove top until hot throughout.
