Woohoo for SIMPLE!
I saw this on Pinterest and pinned it on my board with my million other recipes thinking some day I’d get around to it. I ran into my cousin’s wife this weekend and she asked if I had made it yet because she had saw that I pinned it. I laughed and said no not yet. Well she had. Then she raved about how moist and yummy the chicken was. Well then I knew I had to make it!
I’m also a big planner and had already planned my menu this week so I couldn’t make it. Well my supper date got cancelled and I just happened to have fresh green beans on hand so I whipped it up tonight. This is my kind of dish. Everything in one dish and you throw it together and then stick it in the oven!
I might try it with a half of a stick of butter next time. If anyone tries this before me let me know if it works!
Green Beans, Chicken & Potatoes
Printer Friendly Recipe
Ingredients
4 medium potatoes, cut
2 c. green beans, cut
1 lb chicken breasts
1/2 c. butter
1 package Italian dressing mix
1. Cut green beans up. Line one side of the pan with green beans.
2. Cut potatoes up. Line opposite side of pan with the potatoes.
3. Line the chicken breasts down the middle of the baking dish.
4. Cut butter up and layer over the green beans, potatoes and chicken. Sprinkle Italian dressing over the entire pan. Cover with foil.
5. Bake at 350 degrees for 1 hr.

Yummy, this is one of my favorite– and easiest recipes!! I add breadcrumbs to top of chicken and chop garlic and throw it in there! I spice it up pretty good also before putting Italian seasoning over it all!!!

what type of potatoes did you use? Regular russet?
I think I used russet but I think you could use red too!
I found this on pinterest & have tried it 3 ways, whole stick of butter, 1/2 a stick, and just a little bit of oil. My fave is the oil. I felt like there was just too much butter before.
I like the other commenter’s suggestion of adding breadcrumbs!

Very good!! Agreed, could cook with less butter and probably have great flavor still, but this way was excellent!! I cooked 1 hr with foil and added 20 min at end uncovered. Also sprinkled a small amount of parmesan cheese on chicken and potatoes. Empty pan …full bellies x5

It probably would have been helpful for me to measure the oil but I didn’t. I just drizzled a little on, enough to coat & allow the seasoning to stick. The Parmesan cheese that Lisa added sounds good!

I would sure think so! Just make sure to adjust the time to the cook your pork chops and also not over cook them

I only have canned green beans… do you think that will make a difference?
Also did you use oil instead of butter or both together?
I’ve only used fresh green beans, my thoughts is that they might get mushy because they don’t need to cook as long maybe? I’ve only used the butter on it. I’ve never tried oil but someone else has and commented on this post they just drizzled the oil over the ingredients.
I used canned green beans and it was good. I am making it tonight and plan to season the chicken more with some salt, pepper, and cajun seasoning. That is just our personal preference though.

I ended up cooking the green beans separately because we had guests and my dish wasn’t big enough for all of it. I added the cajun seasoning and a little garlic salt to the chicken and potatoes before I put them in the pan. Then I sprinkled the packet of seasoning over the entire thing. I used unsalted butter since I used so much seasoning. (I wish I had taken some earlier advice and used about half of what I used!) It was very good!

I made this last night and it was DELICIOUS! I did the same thing you did i pinned this recipe a while ago and never made it. But I’m glad it tasted so good! The only complaint I had was the chicken was pretty dry/tough….I baked for an hour at the 350 I wonder if next time I should do onle 45mins?
Pinterest is the best invention for women EVER! Did you cover it with foil? That could cause it to dry out if you skipped that step….
I am making this tonight (late) for when my hubs gets off work. Cannot wait! May try a small but of oil on the bottom and butter on top… not sure yet. I will definitely let you know how it comes out.

Bailey, I read somewhere that you could use broccoli. When I cooked it, I didn’t have room for the green beans in the pan so I just cooked the chicken and potatoes with the same seasonings and butter. If you did that, you could just cook a vegetable you like separately or even a salad would be great! Hope that helps!!
A couple other people said they thought maybe broccoli or asparagus would work well?
It was PERFECT and oh so simple. I bet asparagus would be good in this recipe too! The hubs loved it!
Do you think using Italian salad dressing would work?
I would think it would work okay, but i wouldn’t use any butter or oil and try not to use too much.
Had this for dinner.. it was sooo good. Didn’t have the Italian packet so just used garlic, salt, pepper and red chili pepper flakes. Used 1/2 stick butter and just a tiny bit of Olive Oil. It was so simple and had so much flavor. Used yukon gold potatoes. My new favorite and go to for a simple but yummy meal! Thank you!!
This was yummy but I didnt have italian mix but I took the idea and used liptins onion mix. Yummers!!!! I am sure the italian mix would have been just as good
I’m wondering if you could substitute sweet potatoes for the russet potatoes….has anyone tried that?
I tried it with sweet potatoes and it was delicious! I was worried that the italian seasoning wouldn’t pair well with the sweet potato but it did! I think I like it even better than other potatoes. I have used pork chops instead of chicken too and it was tasty! The possibilities with this dish are endless!!
I used sweet potatoes and russet. I just microwaved them for four minutes before putting everything in the oven. I actually liked the sweet potatoes better.
I used frozen chicken and ended up having to double the cook time. Also, I used only half of a stick of butter and canned green beans, and it was still wonderful!!! Will make this again!
And we had red potatoes! Everything was great!
Can the chicken be frozen at first does it need to be thawed?
I would do thawed. If if it is frozen it will take a lot longer to cook through.

Im using italian style mix instead of the dressing mix. i got them confussed but i think its going to be even better.

Hmmm a ton of people have made it and no one has ever said that. Maybe the size of your chicken breasts or the amount you put in the pan? The more you put in that longer it would take to heat or the larger the pieces the longer it would take to cook through. That’s my only guesses!
i had the SAME issue. just made it….chicken was not frozen….its been an hour and a half and only the chicken is done!!!!! really irritated. never making again.
Did you cover it with foil? If not, it will take longer!
Should I add the green beans later? I feel like if they cook for an hour they will shrivel. Thoughts?

I used frozen green beans – everything else was thawed – after an hour the chicken that was on the same side as the green beans was still raw! Will try it again with fresh ones…but I just wanted to warn everyone!
It might because you had something that was frozen in there and it took the temperature down and therefore takes longer to cook through. I did it with fresh green beans and thawed chicken and it works perfectly!

I tried this recipe tonight as initially stated plus Italian breadcrumbs and Parmesan cheese and it was FABULOUS!! Added 10 minutes on the hour when I added the Parmesan cheese just to make sure chicken was done!! We will be making this again.

This recipe looks so good. Thinking about making it sometime this week. But, Do you really not have to add any water or anything ? Just afraid things would burn or stick..

I just made this for dinner tonight and it was delicious. I did deviate from the recipe because I read the recipe wrong. Instead of buying Italian dressing mix, I bought Italian dressing…oops. I seasoned everything with salt, pepper & garlic, then poured about half the bottle of Italian dressing over it all, and omitted the butter altogether. Everyone loved it, including the kids! I did have to cook it an hour and a half instead of just the hour, but very yummy!
Oh that sounds great! I often marinate chicken in Italian Dressing and then grill it so I would guess it would be similar!

as a fairly accomplished cook this is a great idea, something i never thought of before too. its very versatile as long as you use the three base ingredients — potatoes, green beans, and chicken all take approimately the same time to cook as long as you get the potatoes and chicken pieces roughly the same size. i would probably leave it uncovered — i don’t like covering anything. splash some sherry or wine or water or juice in the bottom to keep everything moist.
i think people with cooking time problems are crowding smaller baking pans, the deeper it gets the longer you would have to cook it.
the breadcrumbs idea is great, but i would pan-fry them with a little oil until it toasts and put it over after to serve for a really attractive presentation. its super easy, and you can add a little extra spice if you like. you have no idea how much flavor toasted bread crumbs can add until you have some. with a little paprika its a staple condiment in polish food and used in italian too, especially with green beans.
I made this today and I added some baby carrots and instead of Italian dressing mix I used Grill Mates Tomato, Garlic & Basil Marinade. I just mixed the marinade as instructed, poured it over just the chicken. Cooked for 1 hour and 15 min at 350 and wonderful!! Thanks for this! I can’t wait to try with all different seasonings. Served this with garlic & cheese biscuits. YUM!

Omg. Amazing! I used red potatoes am frozen green beans and 1/2 a stick of butter. Was in for about 45 minutes. It’s perfect!
I made 2 versions of this tonight. For starters I used 2 smaller pans, small russet potatoes, 5 quartered in each, and canned green beans. In one pan I used Italian seasoning on the chicken and then sprinkled the potatoes, in the other I sliced 2 large lemons, put a few on the bottom under the chicken, some in between and then a couple on top. Both turned out really well!!!
The original recipe I was going to try called for lemons. After reading the reviews I decided not to make it. I had all the ingredients ready to go just needed a recipe to match. I am so glad I ran across this recipe.
I made some minor additions. I sprinkled garlic and onion powder over everything before I did the butter and dressing. I checked it at 1 hour but the green beans were not cooked. I ended up cooking it for 1 hour and 20 minutes and then I removed the foil and let it cook for 10 more minutes. It is by far one of the best recipes I’ve tried. I think I am going to try and fix it in the crockpot next time and see what happens. I’ll update everyone on how that goes.
Best and easiest recipe on Pinterest! I used canned green beans and parboiled red potatoes first! I will definitely make it again!

Only used half stck of butter. Think next time I might marinade the chix in fat free Italian dressing and then use a wee bit of olive oil on the potatoes and green beans with the dry seasoning. Used fresh green beans and 1.5 lbs chix and one hour uncovered was perfect.
So glad to hear it works with less butter!

Oh my gosh. I’m in love with this. Unused half the butter, added garlic powder salt and pepper to all of it before I did the other seasoning packet. And I took the foil off and cooked 10 minutes longer WITH some of that velveeta quest blanco on top of the chicken. And it was delicious. Will be doing this again. A million more times.

After reading the comments I went with half a stick of butter, and just used 3/4 of the Italian seasoning bc I had only chicken and potatoes in my large dish. I also opted using asparagus instead of green beans in a small side dish. Popped the main dish in for an hour and added the asparagus for the last ten minutes (also upped the temp to 375 for the last ten minutes). Turned out fabulous and unfortunately had no left overs. Will make more next time!

I cooked this last night and it was good. I used canned green beans and they came out really good. I had too many potatoes so it took a little longer for them to cook so I took the chicken out and cooked for 20 mins more. I didn’t want to overcook the chicken. My husband liked it too but asked if I could use seaoning next time because it was missing something, for him. All in all we really enjoyed it and I wll be cooking this more often and maybe adding a few things here and there. I can’t wait to try some of your other items!!

Thanks for all the great suggestions….if you wait a while you get several good ideas….trying this with salad dressing and a bit of butter on potatoes and canned green beans….also added the Parmesan cheese and bread crumbs and even mixed a few french fried onions into the green beans….in the oven….Can’t wait to see how it turns out!

I was going to make this with split bone in chicken breast with skin. Should I not add much olive oil or butter, maybe just over the veggies? I don’t have any Italian dressing mix, but I do have Ranch dressing mix. Has anyone tried this?

I would think Ranch dressing mix would work perfectly though. It’s just a different seasoning and am all about Ranch!
The Ranch seasoning worked great. I also used just a little of Old Bay seasoning, not too much. I didn’t have green beans so I used asaragus and garlic cloves. The split chicken breast were very good. But you didn’t have to add much oil or butter. I uncovered it during the last half hour so the skin would brown. Thanks for the recipe!!

When it says 1 PK Italian dressing do you make the dressing first or just sprinkle the packet on top? If you have to make it could you just use Italian dressing already made?
It’s an prepared packet, but you can sub out for Italian Dressing already made, read the other comments for more ideas!
Hmm, thinking of delivering this as a post surgery meal. But worried it will dry out on reheating. Not keen on delivering while the chicken is still raw-unless I we for a fact they were going to cook right away.
