Chicken and Wild Rice Casserole

Wild rice, chicken, and seasonings all baked up together in a creamy sauce is serious comfort food! It’s a pretty simple dish to throw together, only taking 10 minutes of prep time.
This meal goes into heavy rotation, along with our favorite Pumpkin Bread, at our house about the time the kids are back in school! It’s easy to make, so comforting, and you can make it ahead. Plus, the leftovers keep really well.
The kids love it, my husband loves it and I love it, too. I think it’s the wild rice – it’s one of my favorite ingredients. I use it in my Crock Pot Hamburger Wild Rice Casserole and Crock Pot Cheesy Chicken Wild Rice Soup, too.
It’s a hearty and filling meal! Add an easy side dish like my Roasted Cauliflower to make it a complete dinner. I know you’re going to love this.
Ingredients Needed for Chicken and Wild Rice Casserole

- Shredded cooked chicken – Grab a rotisserie chicken over the weekend and prep it for this meal to make it super easy
- Uncle Ben’s Long Grain & Wild Rice Original Recipe – Make sure this the original recipe. The fast cook box will leave you with mushy rice.
- Sour cream – A light version of this works great or you can grab the regular.
- Cream of chicken soup – I always grab the healthy request from Campbells and it works great.
- Seasonings – You’ll have all these in the pantry I bet. Grab your dried onion flakes, garlic salt and pepper.
3 Easy Steps!
- Prepare the rice – cook the rice according to package directions.
- Assemble the casserole – in a large mixing bowl, combine the shredded cooked chicken, rice, sour cream, soup, and seasons and stir to combine. Pour the mixture into a greased 8×8″ baking dish.
- Bake the casserole – pop the casserole in the oven and bake it for 30 minutes at 350 degrees F.
What is Wild Rice?
Wild rice is a nutritious whole grain and is not actually rice! It’s actually from a water grass that grows wild in lakes and rivers. It looks very different from regular rice, too. It’s long and slender and dark brown in color with a very distinctive flavor once it’s cooked. It’s also great in soup so be sure to check out my Wild Rice Soup recipe, too!
I used Uncle Ben’s Wild Rice, which is a combination of long grain rice and wild rice.

How do I store leftover over casserole?
You can store the leftover chicken casserole in airtight containers in the refrigerator or you can freeze it, too, in freezer-safe containers.
How long does leftover casserole last?
- Refrigerator: chicken casserole will keep for three to four days in the refrigerator.
- Freezer: chicken casserole properly store in airtight containers will keep in the freezer for up to four to six months.
Can I make this as a freezer meal?
Yes! You can make this ahead and freeze it. Just combine it all in the baking dish, cover it so it’s airtight, and freeze it. When you’re ready to reheat it, just be sure to add some time to the cooking time since you’ll be baking from frozen. Or, transfer the frozen casserole to the fridge the day before you want to bake it. That way, it won’t take as long to bake!

Chicken and Wild Rice Casserole
Ingredients
- 1 lb chicken cooked and shredded
- 6 oz pkg Uncle Ben's Long Grain & Wild Rice Original Recipe
- 1/2 c. sour cream
- 10 3/4 oz can cream of chicken soup
- 1 tsp dried onion flakes
- 1/2 tsp garlic salt
- 1/2 tsp pepper
Instructions
- Preheat oven to 350 degrees.
- Prepare wild rice according to package directions
- In a large mixing bowl mix together sour cream, cream of chicken soup. onion flakes, garlic salt and pepper. Stir in chicken and prepared wild rice. Put in a greased 8 in x 8 in baking dish.
- Bake at 350 degrees for 30 minutes.

Just made this the other day and it was soooo good; although good Minnesota girl that I originally was, I used all wild rice. Just happened to have a batch frozen in the freezer. Next time I would add some celery. real onions and some green peppers. just ’cause I like em! Thanks for this recipe!

Since we are staying home now I made this the other day, so good! WE needed something comforting! Since I am from MN and always have a “stash” of wild rice in my freezer (it is hard to find in TX where we are now) I used entirely that and no white. Top praises for this recipe! Very easy to put together – – if you wanted, you could use a rotisserie chicken. I made this last night and my 16 year old daughter loved it. I’m preparing her for college and cooking for yourself, so this got pinned to a board of recipes I have just for her. It’d be very easy to elevate this (not that it’s needed!) by adding things like dried cranberries, slivered almonds, shredded cheese on top, etc.
