Pizza Pasta
You guys! We welcomed Koert Jason Evink into the family on Wednesday morning so my blogging schedule has been thrown to heck, but hey it’s with good reason right! We almost fell over when all the doctors and nurses start giggling and asked Dad to let us know the gender when he arrived.
Needless to say we were delighted by being blessed with a boy this time! This was our last either way so we were secretly hoping for a boy, but really just another healthy child was all we could pray for.
I had a sneaking suspicion that it was a boy because little things were just different this time. Maybe mother’s intuition?
I didn’t want to say much about it and just laughed it off when other people asked if I thought it was a boy or a girl. My typical response was that we have two girls already and we seem good at that so why change things up? I’m sure it’s a girl!

I knew my husband was hoping for a boy, but he was pretty set on the fact that it was a girl too. In fact, I started freaking out about a boy name about two weeks ago and starting to doubt my choice. He listened to me while getting ready for bed. Then he stated that he was sure it was a girl so to quit freaking out. Then rolled over and went to sleep. I was left to ponder the name in silence while I tried to fall asleep.
In the end I went with the fact that he was more than likely right and I was in love with the girl name so whatevs.
After another week of pondering I decided that the boy name was pretty good and not to worry about it. It’s actually an old family name on the husband side so it has some sentiment to it too. I love that!
One Pot Pasta
As my sweet babe lays beside me looking all sweet and innocent while catching some zzzzz’s I realize that tomorrow when we go home my life is going to be royally turned upside down and I’m not exactly sure I’m ready for it. I kind of want to stay in this bubble in my hospital room where the nurses are taking care of both of us. The hubs is next to me doing most everything and the girls come to visit on a schedule.
Tomorrow, tomorrow it’s going to be ugly and it’s not going to get any better for a while. I’m going to need stupid easy meals that my family will eat like One Pot Taco Pasta and Crock Pot Spaghetti!
Well, let’s get real I always need those! I’ve perfected this amazing One Pot Pizza Pasta is on the table in thirty minutes and my girls loved it!
To be quite honest both my husband and I did too! It’s the perfect weeknight meal to throw on the table when life is crazy!
It’s cheesy (WIN), it’s got pepperoni (WIN) and it comes to the table in quickly (DOUBLE WIN).
It’s so easy to throw some roasted vegetables with it to complete the meal or a quick side salad. I’m a huge fan of bagged salads!
