- Flour tortillas – Feel free to use whatever type of tortilla you enjoy. Corn tortillas, whole wheat tortillas, flour tortillas — all would work in this recipe. Just be aware that smaller tortillas may be overwhelmed by the amount of cheese used in this recipe.
- Shredded cheddar cheese – I personally thing that cheddar is the best cheese for cheese quesadillas! But there’s tons of other great options like Monterey jack cheese, mozzarella cheese, pepper jack cheese, and Mexican cheese.
- Olive oil – I like to fry my cheese quesadillas in extra virgin olive oil, but you can also use butter, ghee, or another neutral oil substitute if you prefer.

How to Make a Cheese Quesadilla
In a large non-stick skillet, heat the olive oil or butter on medium-high heat.
Add one flour tortilla to the pan and then sprinkle shredded cheddar cheese in an even layer over the top of the tortilla. Place the second tortilla on top.
Cook for 2-3 minutes until the bottom of the tortilla starts to become golden brown and the cheese begins to melt.
Carefully flip the quesadilla and cook on the other side for 2-3 minutes until golden brown.
Remove the quesadilla from the pan and place onto a cutting board.
Slice the cheese quesadilla into 6 even triangles and serve with your favorite dipping sauce. Enjoy!
How to Store Leftover Cheese Quesadilla
Allow the quesadilla to cool completely and then transfer to an airtight container or wrap in aluminum foil or plastic wrap.
FRIDGE: Store leftovers in the fridge for 3-4 days.
FREEZER: You can freeze these quesadillas too! Just place into a freezer safe bag or container and then store in the freezer for up to 3 months.
Why is my cheese quesadilla soggy?
The most likely culprit of a soggy quesadilla is too much oil in the pan. Tortillas will soak up some of the oil or fat that you fry them in, so if you use too much the tortillas may absorb it all and become soggy.

Ingredients
- 2 teaspoons unsalted butter or olive oil
- 2 flour tortillas (10 inch burritos)
- ½ cup shredded cheddar cheese
Instructions
- Heat the butter or olive oil in a large non-stick skillet over medium-high heat.
- Add one tortilla to the pan and spread the cheddar cheese in an even layer all over the tortilla. Place the second tortilla on top of the cheese.
- Cook for 2-3 minutes or until the bottom of the tortilla starts to become golden brown. Carefully flip the tortilla and cook on the other side for 2-3 minutes or until the bottom of the tortilla becomes golden brown.
- Remove the quesadilla from the pan and place on a cutting board. Use a pizza cutter to cut the quesadilla into 6 triangles. Serve with your favorite dipping sauce.
