Easy Steak Bites with Potatoes
For this recipe we’re combining tender sirloin steak with creamy Yukon gold potatoes – it’s a classic combo.
What I love is that you only need one pan to make this recipe. You gotta love less clean-up!
The sirloin is seasoned with a delicious beef rub and the potatoes are flavored with Italian seasoning. Just before you serve the dish, they’re cooked with garlic butter adding the finishing touch.
This meal is hearty and full of flavor – the perfect meal to make when you’re craving juicy, flavorful steak.
Ingredients for Garlic Butter Steak Bites and Potatoes
- Steak: I like to use sirloin for this dish because it cooks fast and is really tender. You could also use New York strip steak.
- Potatoes: Yukon Gold potatoes are perfect for this recipe because they hold their shape well when you cook them. They also have a delicious buttery flavor and texture. Dice them up so they cook fast.
- Beef Rub: This rub is loaded with flavor! If you want to skip it, season the steak with salt and pepper.
- Italian seasoning: This is sprinkled over the potatoes as they cook adding so much flavor.
- Garlic butter: This is just a combination of melted butter and minced garlic.
- Olive oil: Use this to cook the steak and potatoes so they don’t stick to the pan.
- Parsley: Chop some up to sprinkle over the top for garnish.
Can you use garlic powder instead of fresh garlic?
For the garlic butter, I highly recommend using freshly minced garlic for the best flavor! If you don’t have fresh garlic on hand, you can sub garlic powder – one teaspoon should be enough.

How to Make One-Pan Steak and Potatoes
Season the steak and cut it into bite-sized pieces.
Heat a cast iron skillet over medium heat and cook the diced potatoes in butter and olive oil until they are tender. Season them with Italian seasoning while they’re cooking. Remove them from the pan.
Melt more butter in the pan and add the garlic. Add the steak bites and cook them until the reach your desired doneness.
Add the potatoes back to the pan and toss them with the steak and garlic butter. Garnish with parsley and serve!
How do you know when steak bites are done?
Like a whole steak, it depends on how well-done you like your steak! Here are the level of doneness you can use as a guide – we like ours medium to medium-rare!
- Rare: 120 to 130°F
- Medium rare: 130 to 135°F
- Medium: 135 to 145°F
- Medium well: 145 to 155°F
- Well done: 155° and higher
Use a meat thermometer to measure the internal temperature or, if you don’t have one, slice a steak bite in half to see if it’s done to your liking.

Ingredients
- 1 Tablespoon olive oil
- 4 Tablespoons butter divided
- 1 pound yukon gold potatoes diced into ½ inch cubes, about 3 ½ cups
- 4 minced garlic cloves
- 1 teaspoon Italian seasoning
- 2 teaspoons beef rub can also substitute salt & pepper
- 1 ½ pound sirloin steak cut into 1 inch cubes
- Freshly chopped parsley for garnish
Instructions
- Rub the steak with beef rub and cut into 1 inch cubs. Set aside while you prepare the potatoes.
- Heat cast iron skillet over medium heat. Add olive oil and 2 Tablespoons of butter to the skillet. When the butter is melted add the potatoes to the skillet.
- Cook potatoes for four minutes without stirring. Sprinkle Italian seasoning on the potatoes and stir. Continue cooking for 6-8 minutes stirring a few times or until potatoes are fork tender. Remove from the skillet and set aside on a plate.
- Turn heat to medium high heat and add the remaining 2 Tablespoons of butter to the skillet. When butter is melted add steak and garlic to the skillet, making sure the steak is in an even layer. Sear for one minute. Flip steak with spatula or fork. Cook for 2-3 minutes or until golden brown and cooked to desired doneness.
- Add potatoes back into the pan and toss to coat.
- Garnish with chopped parsley if desired and serve immediately.
Tips
