- Pie shell – You can either make your own pie crust or use a store-bought one. Either will work just fine!
- Strawberries – Make sure that you slice the strawberries into even slices so that they bake evenly.
- Sugar – Use granulated white sugar to sweeten this homemade strawberry pie filling.
- Cornstarch – Thicken the pie filling with a bit of cornstarch!
- Strawberry Jell-O – This is my secret ingredient to the most perfect strawberry pie. Adding some jell-o is a total game changer.
- Optional: Whipped cream – Don’t forget add a dollop of cool whip or Homemade Whipped Cream!

How to Make Easy Strawberry Pie
Start by baking the pie shell and then allow it to fully cool on a wire rack. Then clean your strawberries well, remove the tops and slice them.
Place the sliced strawberries into the prepared pie crust, then start on the jell-o filling.
To make the glaze for the strawberries combine water, sugar and cornstarch in a medium saucepan, whisk and bring it to a boil over medium heat. Simmer for two minutes and then add the strawberry Jell-O until dissolved.
Once combined, pour the mixture over the berries.
Transfer the pie dish to the fridge and allow it to chill until set. Once ready, slice, top with whipped cream and serve!
How to Store Leftover Strawberry Pie
Cover leftovers of this easy strawberry pie recipe with plastic wrap and place in the refrigerator. If you are making it ahead of time store, covered, in the refrigerator until it is time to serve. It will store well for about five days.
You can also prepare this pie ahead of time and freeze it! Just wrap it well with tinfoil or plastic wrap and pop it in the freezer. Well sealed, a strawberry pie will keep up to two months in the freezer. Just beware the juices will be a bit runnier if you freeze it and then thaw to enjoy.
How do you keep strawberry pie from being runny?
The cornstarch in this recipe will keep your pie from being runny. It will also help thicken up the filling. However, if you’re still having issues with a runny filling, then make sure you are adding cold water to the saucepan and heat it to boiling to fully activate the thickening power of the cornstarch.
How do you keep pie crust from getting soggy?
There are several ways to prevent the crust from getting soggy. In this recipe, you’ll blind bake the crust, which is simply pre-baking the crust. Puncture the bottom of the crust with a fork in several places. This will keep it from bubbling. If the edges of the crust are getting overly dark, then cover them with parchment paper or foil until the baking is complete.
Some use pie weights or even uncooked beans (white beans or pinto beans, really any type of uncooked bean will work) poured into the bottom of the pie crust to keep it from bubbling up, but really poking it with a fork will do the trick for this pie.
Pro Tips for the Best Strawberry Pie Recipe
- For best results, serve your leftovers within the first two days. Over time, the crust will get soggy. However, if you will be waiting to serve it then you can brush it with a egg wash to help prevent the crust from getting soggy.
- If the edges of your crust start to brown to quickly when baking cover them with a strip of aluminum foil.
- Graham cracker crust work with this strawberry pie, just keep in mind that it will get soggy more quickly than regular crust! We personally love that buttery graham cracker crumb crust with the strawberry pie filling.
- Be sure you leave the pie in the fridge long enough for the filling to set well.

Strawberry Pie with Jello
Ingredients
- 9 inch pie shell
- 4 cups strawberries washed and hulled
- 1 ½ cups water
- ¾ cup sugar
- 2 Tablespoons cornstarch
- 3 ounces package strawberry Jell-O
Instructions
- Bake pie shell according to package directions. Cool.
- Place washed and hulled strawberries in cool pie shell.
- Combine water, sugar and cornstarch in a saucepan. Bring to boil and cook two minutes. Add strawberry Jell-O and stir until dissolved. Slowly pour over berries.
- Chill in refrigerator until set. Store, covered, in refrigerator until serving.

Hey Julie,
This pie recipe is one I have used for more years than I can count!! It is simple and VERY good. I haven’t ever used the corn starch but that doesn’t seem to matter. Quick easy recipe any time you want something quick and simple. just put some whipped cream on top and you are good to go. I also pre-bake it as mentioned. Keeps great in fridge for couple of days, if it lasts that long.
